Most people around here knew Dr. Ed Hitz of Elizabethtown as the man to call in when their calves had the scours or their sows were having a difficult delivery. For sixteen years Ed was a veterinarian serving the farms in the Susque- hanna area. But in his spare time Ed was turning into a darn good cook. So good, in fact, that he began to cater elegant little dinner parties, by reservation, in his home. Ed’s dinner parties be- came so popular among gourmets that reservations had to be made more than six months in advance... and Ed began to think about a ‘‘real’’ restaurant. This week, Dr. Ed Hitz, at the age of forty, has sold his veterinary practice and embarked on a new career, celebrated by the opening of a most unusual restaurant, the Country Chef, in a restored barn in Mount Joy RD2. Dining at the country chef is a unique blend of pleasant sociability and romantic privacy. Each dinner party has a private dining room and waitress on the upper floor of the barn where the meals are served by candle light. But all the guests gather in an elegant first floor lounge area for cocktails and hors Correction The Times, in last week’s paper, incorrectly stated that Linda Sherk, the Miss Lancaster County Contestant, went to Done- gal High School. The Times apologises to Ms. Sherk and to our readers. d’oeuvres and conversation before dining privately —and meet there again after dinner for post- prandial drinks. Dining is leisurely; guests are encouraged to spend their entire evening savoring the fine food, drink, and companionship. Dr. Hitz, who is the chef, serves only one entree each evening, but he makes out his menu, which features French cookery, a month in advance so that reserva- tions can be made accord- ingly. His three teenage daughters, Lucy, Lisa, and Laurie, wearing charming old-fashioned gowns, serve the dinner parties. His New pastor, Rev. Thuma wife, - ‘Elaine, .is the hostess. And Ed, himself, pours and tastes the wine for each party of guests. Marie Brandt, a neighbor, is behind the scenes, keeping the service run- ning smoothly. This elegant dining place, a year ago, was a dilapidated, unused barn, a little north of the Rheems-Elizabethtown exit of Rte. 283. A year of hard work by Ed and his family has transformed it into one of Lancaster County’s finest res- taurants. And Dr. Hitz, the veter- inarian, is transformed into Ed Hitz, the restaur- ateur. The farmer’s loss is the gourmet’s gain. familiar face Rev. B. E.
