THE RECIPES. S<ft Cookies. —Take one coffee cup of" butter, three of sugar, one of thick cream, and four eggs; mix the butter and sugar, and then theeggsand cream, j Take a pint of sifted flour and a tea spoonful of soda, mix well, and stir in to the other ingredients sufficient of I it to make the paste or dough stiff • enough to roll out, cut it into squares, j impress with a fancy mould, and hake in a slow oven. Caraway seed and , ground coriander seed are often used io flavor these biscuits called 'cookies.' j Composition I'udding —One and a half cups molasses, one cup of chopped suet, two cups of rnilk, two teaspoons of soda, and flour enough to make a pretty stiff batter. Boil steadily one hour. Ginger may be added if desi-; rable. French Cake. —One tablespoonful of j butter, two cups of sugar, two and a half cups of flour, four eggs, one tea spoonful of soda, two of cream tartar ; and a half cup of milk. A Model Composition- To boys and girls, who are perplexed i to know what to write about, and how to ; write it, when required by their teacher to bring a "composition," we commend the following model: WINTER. —Winter, is the coldest sea- ; son of the year, because it comes in the j winter. In some countries winter comes j in summer, and then it is very pleasant. I wish winter came in summer in this coun try. Tbeu I could go skating barefoot, and slide down the hill in linen trowsers. We could snow-bail without our fingers getting cold—and men who go out sleigh riding J wouldn't have to stop at every tavern to j warm, as they do now. It snows more in ! winter than it does in any other season of the year. This is because so many cutters ' and sleighs are made at that time. Ice grows much better in winter than j summer, which was an inconvenience be- ' lore the discovery of ice houses. Water that is left out of doors is apt to freeze j at this season. Some people take in their 1 wells and cistern on a cold night, and keep them by the fire, so they do not freeze. Skating is great fun in winter. The boys get their skates on when the river is frozen over, and race, play tag, break through the ice and get wet all over (they get drowned sometimes,) fall and break their heads, and enjoy themselves in many other ways. A wicked boy once borrowed my skates and ran off with them, and I couldn't catch him. Mother said a judgment would overtake him one day. Judgment will have to be pretty lively on its legs if it does, for he runs bully. There ain't much sleigh riding except in the winter—lolks don't seem to care much about it in warm weather. The grown boys and girls like to go sleigh riding. The boys generally drive with one hand, and help the girls to hold their muffs with the other. Brother Bob let me go along a little way once when he took Celia Crane out a sleigh riding, and I thought he paid more attention to holding the muff than he did to holding the horses. Snow balling is another sport. I have snow-balled iu summer, but we used stones and hard apples. It isn't so amusing as it is in winter somehow But enough I have dashed off these little things about winter while sister is getting ready for school. Good bye. NEDDIE. C. G.
