Answers to that question illustrate the potential for niche markets that possibly could be utilized by Eastern dairy farm ers doing on-farm processing, said Scott A. Rankin, Cooperative Extension dairy and food products processing specialist at the University of Maryland. Dr. Rankin heads a planning committee for the first workshop of its kind in Maiyland-”On- Farm Milk Processing: Alter native Income Opportunities for Milk Producers.” The all-day event is scheduled in Frederick, Md., on Saturday, April 1, tenta tively at the new Dutch’s Daughter restaurant on Himes Avenue in southwest Frederick. A $2O registration fee includes lunch and printed materials. Subject areas will include processing of cheeses and other specialty milk products from cow, sheep, and goat milk. There will be opportunity for network ing sessions with representa tives of successful on-farm milk processing operations.
