Low moisture Cheddar, Gouda, Brick and Parmesan are less affected by freezing than such high moisture varieties as cottage, cream and Neufchatel cheeses. These do not freeze well as they tend to become watery and mealy. To prevent cheese from drying out, it should be frozen in its original wrapper or sealed in freezer wrap, heavy-duty foil or plastic bags. In ad dition, each piece should be no more than one inch thick, or weigh more than one pound. When ready to use, thaw cheese slowly in the refrigerator, and use as quickly as possible. Note that small amounts of Blue, Roquefort and Gorgonzola cheeses can be frozen but may become crumbly when defrosted. They are suitable, however, for use in salads or salad dressings. • • * ATTENTION ALFALFA GROWERS!
