MOLDED POTATO SALAD 2 tablespoons gelatin 2% cups cooked potatoes 4 hard cooked eggs 2 tablespoons vinegar radishes, chopped 2% cups milk 2 tablespoons mustard 3 A cup mayonnaise pepper and salt to taste green onions and celery, chopped Soften the gelatin in 1% cups of milk. Dissolve over low heat. Add the rest of the milk and remaining ingredients. Chill until slightly thickened. Pour into an oblong pan to mold. Cut into squares if desired. Serve with salad greens. Carolyn Musser, Myerstown SOUR CREAM AND APPLE COLESLAW 1% cups dairy sour cream 2 egg yolks 3 tablespoons prepared horseradish, drained 2 tablespoons lemon juice V «teaspoon paprika 1 teaspoon sugar 1 teaspoon salt 2 quarts (2 pounds) finely shredded green cabbage 1 cup tart red apple, cubed and pared Mix the sour cream ana egg yolks in a medium bowl. Add the rest of the ingredients, except cabbage and apple. Mix well. Pour dressing over cabbage and apple. Toss until well coated. Refrigerate at least 30 minutes. Makes 6-8 servings. STRAWBERRY DELIGHT SALAD 2 tablespoons sugar 2 cups strawberries, sliced 13-ounce package strawberry flavored gelatin 1 cup boiling water % pound marshmallows % cup milk 1 cup whipping cream Sprinkle sugar over berries and let stand 30 minutes. Disolve gelatin in boiling water. Dram berries, reserving juice and add enough water to juice to make 1 cup. Add the juice to the gelatin. Chill until partially set Combine marsmallows and milk. Heat on top of a double boiler until marshmallows melt. Cool and fold in whipped cream Add berries to gelatin and fold m marshmallow mix Pour into 1-quart mold and chill until set.
