XXX MOUSSAKA (ISRAEL) 1 pound ground lamb, mutton or beef, or mixture Salt and pepper to taste' 1 eggplant % cup tomato paste Vz cup dry bread crumbs or browned grits Season meat to taste with salt and pepper; press into the bottom of a greased casserole or baking dish. Slice unpared eggplant into thin rounds and arrange over meat. Top with tomato paste; cover with bread crumbs or grits. Cover tightly and bake at 350 degrees F. for 30 minutes. Then somebody will reach over, tap me on the shoulder, and ask, ‘‘Aren’t you from Lancaster Farming?" And suddenly my world feels all right again.
