Sharing trade secrets The food was delectable and the presentation beautiful as executive chef Gary Edwards offered “tricks of the trade” to about 20 people during a re- cent cooking class at the Back Mountain Memorial Library. Sharing some of his “secrets” to making food taste as good as he does, the co-owner of Fire & Ice on Toby Creek in Shavertown cooked up carrot gnocchi with butternut bran- dy sauce and pan-seared sau- téed scallops. The presenta- tion of the food, complete with diced red peppers and parsnips, brought oohs and aahs from class participants while the room fell silent when everyone began to eat. A dish of fresh berries topped with a Hollandaise-like sauce made from eggs, sugar and Marsala capped off the. eve- ning.
