Smith predicts that well be seeing more emu meat in the markets within the year. “The Beaumont Inn is currently serv- ing ostrich meat on its menu and they are seriously considering adding emu meat.” Threeyears ago Skip and Nancy went to a farm near Harrisburg to get the first emu chicks that make up their original pairs of emu. This spring and summer they in- cubated and successfully hatched their own emu. In consideration of animal rights activists and veg- etarians, Smith admits the ani- mals make fun-loving pets but hopes to raise 50 animals this next year for market. Mikki Lacey and her daughter Sarah, also of Beaumont, long time friends of the Smiths, came regularly last summer to feed, visit, or babysit the emus. Says Sarah Lacey, * They look like ostriches but have no wings, they are fun.” But adds Mikki Lacey "They are very homely.” Legion Aux. officers The Ladies Auxiliary of the Daddow Isaacs Post 672 of Dallas will hold its installation of officers on Thurs., Sept. 18, at 7:30 p.m. Mary Colwell will preside over the installation of the ladies officers. Jean Levy, will be reinstalled as president of the auxiliary; Millie Bozak, first vice president; Jackie Pearson, second vice president; Shirley Strohl, secretary; Marion Kunigonis, treasurer; Susan Stephens, sergeant at arms; Mar- guerite Dubil, historian; Florence Owens, chaplain. The Dallas Auxiliary is in the midst of planning a fund raiser. On Sat. Oct. 4, the ladies will present a Nite at the Races.
