Potato Dumplings To one pint of grated potato, which should be cooked and lightly salted the day before you wish to use them, add four grated soda crackers, two well-bcaten eggs and Just sufficient flour to prevent them sticking to the hand. Form Into balls, any size you, desire, and boll in salted boiling water until they rise to the surface, which will be in about 15 minutes. Keep the pot covered while they are cooking. Skim frbm the wa ter and over the top pour cracker crumbs browned in butter. Fried Beef Kidneys Cut a beef kid ney Into slices one-third of an inch thick; put thorn In a bowl and pour boiling water over; let staud 10 min utes; lift the slices from the water to a towel and dry thoroughly; then roll In flour; put a little butter In the fry ing pan when hot; lay In the kidney; when brown on the under side turn and brown th9 other; sprinkle with salt and pepper; arrange on a hot plat ter, resting one on the other; add a little flour to the butter in the frying pan; stir until smooth; season with salt and pepper; add water and boll until thlkened; remove; add a little lemon Julct; strain into the centre of the platter; serve very hot, with squares of toast. Lobster Cutlet Put one cupful of chicken stock or cream In a frying pan; rub together 11-2 level table spoonfuls of flour and the same of butter; add this to the boiling cream and stir until thickened; then add cream and stir until thickened; then odd two cupfuls of chopped lobster meat; season with salt and pepper; cook two minutes; then add one egg, well beaten; stir quickly; remove from the fire and odd one tablespoonful of lemon Juice; spread the mixture on a platter and when' cold divide into as many portions as are to be served; shape into cutlets, roll in crumbs, then in beaten egg, then in crumbs again; put three or four in the frying bas ket and fry in smoking hot deep fat; remove, drain on paper and stick a clam in the end of each lobster cutlet; serve on a folded napkin with soma tartoaa.
