It is also found in the stomach of animals, as the ox, calf, &c. It is the material used by farmers in making cheese, called Rennet, the effect of which has long been the spe cial wonder of the dairy. The curdling of milk is the first process of digestion. Ren net possesses astonishing power. The sto mach of a calf will curdle nearly -ohe thou sand times its own weight of milk. Baron Liebig states that, "One part of Pepsin dissolved in sixty thousand parts of 'water, will digest meat and other rood." Diseased stomachs produce no good Gastric Juice, Rennet or Pepsin. His experiments with Dr. Beaumont, on the Gastric Juice, ob tained from the living human stomach and from animals are well known.
