Practical Ewlence ——o— When speaking of science in agriculture we are often apt to think that at is a very learned or very mysterious thing; and when agricultural science is referred to in any way, visions of chemistry,geology and physiology, as propounded by learned professors g'neralty arise. Yet there is a science separate and distinct from all this which is quite us worthy of the name, andYthis is mete knowledge of the nature of things. We know of one who is con sidered eminet.tly scientific and whose fame is world wide. When his deep studies are referred to in terms of com mendation, t e disclaims anything of the kind, and asserts that his only merit is iu "going through the world with his eyes open." It is simply the old story.— Settle h ive ears to in ar but hear nut, and eyes, lut du nut see. Science is vim ply learning all about a thing—knowl• edge; art is Hu putting of this knowl edge into use. Let us iltustrate this by the nearest wheat fields. One man finds he has a magnificent crop. say twenty•five bushels to an acre; another has but fifteen. But to all appearances both starts were the same. The stalks grew pr tty thick to gether, and probably the weight of straw would be near alike from both, and th,. ears in both be about the same length.• Even on weighing the grain will be founcl of about the same number of pound it to the bushel. sometimes this is often ).so, the diffecerre often bong in weight ; but we are speaking of what sometimes oc curs. Most frequently no one knows why this is so. It will he remarked that "somehow" the heads were heavier in one case than the other, and that is all. But your curious fellow is not satisfied with "somehow." He palls the head to perm es. He finds the head composed of a zigzag main stalk, and from t e crown of every little bend a small bunch of scaly chaff proceeds. The wheat ear is made np of these small clusters or bunch es. Examining these little bunches he finds that in an ear yielding a fair crop there is about two grains in a cluster. In u good crop there are three, and in an extra.one lour. Then in the lower clusters in a bad season there are no grains, while when the season is good the ear is filled quite to the bottom. Now all this is simple knowledge. It is sci?nce. One may ask of it. as of all oth, r science, what good is it after it is Known ? The man who has a full crop, full ciust rs, full ears—twenty five bush els to the acre—thr,shes it oat and gets the money ; and he gets the money whether he knows Iti:w the ears were fill ed out or not. Pastures, Meadows and Grasses -4J During the Central New York Fair at Utica, evening meetings were held for agricultural discusszons. The proceedings of Wednesday evening, when the above subject was under Dinsideration, ure re ported below expressly for the Country Gent lemon. Mr. Willard began by explaining the great importance of the grata crop to the country at large. The reports gave the hay crop at $368,000,000. The pastures were certainly not less, as their growth continued through the Aetit , (lll : meadows only a part of the season. Mr. W. dwelt on the great importance of a mixture of different sorts of pastures, because plants of the same kinds will not grow well in close proximity, but where a number of sorts are micod, they will grow In clone contact. and fill up .ill the space notnptetely. For meadows, plants ate sought nearly at the same time ; but for pastures they should mature ear v a, possible' su as to give a continuous sup ply of food. Mr. W. gives a list of ma• nv sorts which afford such a succession. and corm a good compact sod, among which were Juae grass, timothy, white clover &c. Many past urea are overstocked by poor managers, the grass is eaten cl.isely, and the plants kept small. The consequence is, that the actual product Is not one-halt as great as when the plants are allowed to get a thrifty start ; besides which this overstocking and close feeding permits the weeds to creep in. Pickled Onions ——o— With pi kles. as with every other object in lite. it is desirable to make up your mind what you wish tor. Some like pick- led onions soft ; some hard and nutty : some think them better when while and bottled in colorless vinegar : they often tasv! of nothing but that and spices:. but in colored vinegar and less fierey condi ments, you can Mete UP well us see, that you see eating pickled onions. Gather the onions dry ; expose them to the air and sun for a fortnight or so. Peel them witint9t too much waste. For soft pick. led onions,q%row them into boiling salt and wuter,ltind btjil until you can stick a steel fork into them. Skim out on a platter to drain off, then put into jeers or bottles, and pour but vinegar, spiced to taste, over thest. Cork up tightly. For hard. white pickled onions,peel and scat ter salt over them, and let them stand three days. Drain through a colander, stack in bottles, pour over them White vinegar. (chemists vinegar.) in which plenty of capsicum has been steeped. lions to Clean Soap Suds It. is well known that a little alum dis soli-. d is very effective in cleaning mud dy ware:: tint a rt time since alum was applied in a manner which, from its Lorelty and its valuable results is worthy iif :voice. In a place where water is sediee at preseet, a little u um nas die shied in hot water, and thrown into a tub of thick soap ends. In a moment the soap curdled, and accompanied by the muddy particles, sank to the bottom leaving the water perfectly clear, pure, and devoid of Tirs water was found very useful for washing clothing again, win n poured off the sedi mint. Ai similar ri cult was attained at a quick manner by filling a boder with uup suds, lplacing it on the fi re and throwing a it of alum into it.
