THE Indian Corn Bread The editor of the American Agriculturist offered three prizes, of §lO, S5. and S2, for the three best specimens of corn bread.— There were two hundred and nineteen com petitors ! It must have been rather a dif ficult matter for the judges to decide on the respective merits, as they had to take into consideration the cheapness and little trouble in making, as well as quality of the tread. The first, second and third prize loaves were made as follows: First Prize Com Bread. —Jake two quarts of corn mtal, with about a pint oi (thin , bread 'sponge,' and water enough to wet it. 31 ix in A pint of wheat flour und a übiespoopful of salt. Let it rise, and then knead well second time. Bake 1 j hours. This loaf was of beautiful form, cut light, and wag of fair quality when three or four days old. Except in color and fif .'crcnce in taste, it resembled a wheat flour loaf. Second Prist. —Mix 2 quirts of new corn ineai with 3 pints of warm water Add 1 tablespoonful of salt, 2 of sugar, and 1 large tablespoonful of hop yeast. Let it staud io a warm place 5 hours to rise. Then add \ pint Cl 2 teacup f'uls) of wheat flour and f pint of warm water. Let it rise again 1 i hours: then pour it into a pan well greased with sweet lard, su J let it rise a few minutes. Then bake in a moderately hot oven 1$ hours It is 6est when hot This was a beautiful, almoit erustless loaf, of a pleasant sweetish taste, and good quality. The bottom part was a little heary, as if not baked quite enough, or not raised sufficiently, but a commendable bread, and rather more palatable than the previous oue. Third Prize. —Take 2 quarts of white corn uieai, 1 tablespoonful of lurd, 1 pint of hot water. Mix tLc lard in water; stir it well, that it may get heated thorough y, and add h pint of coid water. When the mixture is cool enough, add 2 well-beaten eggs, and 2 tablespoonful of home-made yeast. Lake 1 hour in a moderately heat ed OTen. If for breakfast, make over night. This, owing to the whiteness of the meal j and the lightness of the texture, as well as 7 | the general appearance of the loaf, greatly resembled the ordinary loaf of wheaten bread on our tablea, end is worthy of gen eral adoption, where eggs are sufficiently plentiful The third prize loaf was of the best qual ity, and the first prixe was the poorest. — But a* the latter was the Cheapest, it re ceived the The third prize receipt appears to us excelleut. A prize of $4 was also offered for the best and cheapest corn cake. This was ' awarded to a cake made as follows : First Prize Cake. —Take 3 teacupfuls of corn meal, 1 teacupful of wheat flour, '2 tabiespoonfuls of brown sugar, '1 teaspoon fuls of cream of tartar, and 1 teaspoonful of salt. Mis veil together ichile dry. — Add 1 teaspoonful of soda (or saleratusj dissolved in warm water. Mix the whole to a thin batter, and bake in a quick oven, H hour. The same batter will bake quick er in patty pans, or on a griddle, like buck wheat cakes. A discretionary premium of $2 for the best corn meal cake of any kind, without regard to cost or trouble, was awarded to a cake made a* follows ; B'-st Corn Meal Cake of any Kind.— .' ake eight egg- and their weight in pow dered sugar : the weight of six eggs Indian meal, $ lb. buttc-r and 1 nutmeg. Beat the wnitcs and the yolks of the eges sepa rately, adding the whites last. * Bake 1 hour. The Committee also cail attention to a cake or pudding puitable for (breakfast, made as follows: lake cups corn meal, 1 cup wheat flour, 1 teaspoonful salt, 2 teaspoonfuls cream tartar 1 teaspoonful soda, 3 eggs, 3 tablespqoufuls sugar, 1 } pints milk, and 1 tallespoonful butter. Hub meal, flour, salt soda and cream of tartar through a s'.eve, which will mix tbem thoroughly.— I hen beat the eggs and sugar together, ad ding to them the butter melted. Next udd the milk, aad last of all stir in the previously mixed meal, flour, salt, soda and cream of tarter. Bake immediately and rapidly (to secure, the escaping gas',. Twenty minutes will finish it in a brisk oven. Salt in Throat Diseases. We clip the following from an exchange, which cur readers will do well to recollect, as it may he beneficial to the m : ' In these day 3 when discasesofthe throat arc so prevalent, and in many cases so fatal, the use ot common salt is recommended as an effectual remedy. We commenced bv using it three times a day—morning, noon and night. We dissolved a large table spoonful of pure table salt in about half a tumbler full of cold water. With this we gargled the throat most thoroughly before meal time The result hag been that, dur ing the entire winter, we were not only tree fftiQJ the usual roughs and colds to which, so far as our memory extends, we have always been subject but the dry hack nig cough has entirely disappeared.
