The common method of fierring candies, in order to produce them economically, can be readily accounted for. Poisens are much more cheap than genuine ex tracts. Peach flavors in candied almonds and sugar plums are obtained from full oil, which is very poisonous. The bitter al mond flavor is created from unadulterated prussic add; pineapple is procured from very rotten cheese and nitric acid. Candies are made, purporting to be flavored with fruit from which no extracts tan be obtain ed.
