But there is one item of management which is ' either disregarded or imperfectly under stooti, and that is, the early education of the colt. Mr. Rarey has done much to up set the old-faahioned notion of breaking horses, and has shown that, by -judicious bendfng, the necessity for breaking may be entirely obviated; but even Mr. Itexey's sys tern confined itself chiefly to horses which had arrived at an ag,t when their services could be made immediately useful. The reason wky it is necessary to apply a stren uous system of training in bringing colt's to their first work is, that, they have to be taught to do that for which their previous life has iu no matter prepared their minds. The first threcor tour years of a colts Iffe are passed at pasture, or in the stable, and the most that he learns is, to obey the re straints of the halter, and occasionally, though unfortunately, too seldom, to allow himself to be cleaned. When the day of his usefulness arrives, he is to be taught his . trade in a few days or a few weeks ; and the bit, the bridle, the girth, the saddle, the hard-pressing collar,—all perfectly flew rev- elation to lara,—all to be crammed down his young throat in the most remorseless =limner, and he is a fortunate colt if the cramming be done with a gentle hand. Too 'often his simple wonder excites his muster's temper, and a contest ensues, from the effect of which he never recovers. If every colt could be treated as are, for example, those of Charles Sharpless, of Pennsylvania, the result upon, the average temper of our harness and saddle horses would be remar able, and at least one-half of the dangers - a hortremtuiship would be obviated. It is Mr. Sharpless' universal custom, while the colt is still running with its dam, even at the age of six weeks or tyro months, to fol low the handling and caressing to which it has been accustomed almost from the hour of its birth, by a gradual harnessing and playing with straps, and generally on the third or fourth day of trial, by hitching to a pair of light wheels, with which the little shitver follows its dam about the field. .The coltlearns these things at this early day as easily as it would learn anything else, and the lesson is never forgotten ; so that when the time for actual harnessing comes, it creates" no surprise, makes- no trouble; and gives rise to no contest. BOOZING A STILAX...--Prot Austin Flint, jr., in an Article to the .71earth and Home, tells the following : "To prepare the steak rub in salt and pepper well with the hand, and grease both sides slightly with sweet lard or fresh butter. ttee none of the strong butter ,of Inferior quality, commonly known as cooking but ter. The steak thus prepared should then be place between the bitft oea well warmed light gridiron, so that it can be easily turn ed over the fire. The preparatiot of the fire is the mina important of all. Pat the steak over the fire, and turn often until done.— When done place it upon u hot dish, sprin kle over it a little more salt 'end pepper, spread over it alittle sweet butter, and let i t be served and eaten immediately. The differ ence in flavor between a cooked steak eaten immediately, -end one served five minutes ailni-it is done, is enormous."
