Organic Dairyman Profits From Doing What He Believes DAVELEFEVER Lancaster Farming Staff GAP (Lancaster Co.) Roman Stoltzfoos has re ceived a real education since he switched to grass based dairying 10 years ago and became certified organic two years later. “It’s been a wild ride and a great learning experi ence,” said the grazier from Gap. Stoltzfoos grew up on his parent’s 200-acre dairy, Spring Wood Farm, which he now owns. Although his father Sam was not a grazier, he was an innova tive farmer and “very much a conservationist,” Roman said. Roman and his wife Lucy live and work on the farm.
