After she graduates from high school, she does not plan to go to college but wants a full time job working with animals. The past summer’s severe drought caused a major hardship for the Levans. They generally have two bams filled with excess hay to sell in addition to having enough for their own animals. This year, they needed to feed hav from July 1. Although the last cutting of hay looked great, it wasn’t dty enough to properly dry out the hay. In two pastures the streambed dried up and new holes were dug to get water. The Levans do not expect industry stan dards in beef judging to conform to Piedmontese characteristics any time soon. “But I think the younger generation is more health conscious and will look for low-fat beef," Shirley said. Her own children do. Every February, the family does its own butchering. Recently they ran out of Pied montese beef and have purchased supermarket beef. “I have to force the children to eat it,” she said. “They much prefer Peidmontcse beef.” The Levans arc con vinced that Peidmontcse beef will change Ameri can's beef eating habits. Cathy maintains, “It’s the inside story that counts. That’s where the beef dress out much better. “You can have your beef and still have low fat and cholesterol," Shirley said. “Ounce for ounce it has less fat, calorics, and cholesterol than chicken without the skin and even less cholesterol than flounder.”
