(Continued from Page B 8) ANSWER A Finger Lakes, New York reader wanted to know if a large block of Cheddar cheese can be cut and dipped in paraffin to keep it from becoming moldy. Thanks to Mrs. David Weidenhammer, Bernville, for writing that she read in Rodale’s Basic Natural Foods Cookbook: “. . .for extended keeping, you can seal the cut surfaces of cheese with hot paraffin.” That is all the information the book offered on dipping. The article also suggested wrapping the cheese tightly and refrigerating for 2 to 4 weeks or to tightly wrap and freeze for up to six months. Cheddar is one of the cheeses most suc cessfully frozen. Freeze cheese in one-inch thick pieces and use quickly after thawing. If cheese becomes hard and dry during storage, use it for grating cheese for spaghetti, veget ables, soups, biscuits or casseroles. However, if the cheese grows mold, discard it. because some molds contain danger ous aflatoxins.
