Food Safety and Quality Begins At The Farm The quality of milk that con sumers buy today is the highest it has ever been. Farmers are well aware of all the tests and regula tions that apply to them to guaran tee this quality. However, consumers are also more concerned about quality today than ever before. Every now and then, the media highlights some problem in the food chain and the public begins to question the safely and quality of their food. 10632 Rt. 75 Eden, New York 14057 \^^oAumacAe’i. These cases are isolated, but really hurt the food industry and tend to scare people mote than is necessary. Therefore, fanners must be constantly striving to produce top quality milk. A quality assurance program assumes that'there are explicit standards of quality for a product and that proudcers and users are aware of the standards. This is the basis for the Dairy and Dairy Beef Quality Assurance Program. Dairy producers, in cooperation with their vet and dairy fieldman, agree to this 10-point program. the main emphasis is on the proper use of antibiotics and how to prevent them from entering the milk supply. You will be required to complete this program if your milk is found to contain antibiotic. It is voluntary for others, but all dairy farmers can benefit by com pleting the book. There is also a trend in quality control to focus on critical control points in the production of milk and other food products, rather than only testing at the end of the cycle for acceptance or rejection. An example of Hazard Analysis Critical Control Points (HACCP) would be for the hazard of bacteria in milk. The points to monitor to elimi nate this hazard would be: • Clean Cows ' Clean milking machines • Clean and sanitize milk handling equipment • Rapid cooling of milk in the bullk tank • Cool temperature storage of milk CROP PROTECTANT PRODUCTS Agrox D-L Plut 1.8 oz.
