Thanks to Joan Yarnall, Gilberts ville, and to Rosemary Ackenbach, Pen Argyl, for sending recipes Mexican Fried Ice Cream 'h gallon French vanilla ice cream 4 to 5 cups corn flakes, coarsely crushed 1 tablespoon plus 1 teaspoon ground cinnamon Vegetable oil Honey Sweetened whipped cream Cinnamon-sugar tortillas Place 8 scoops ice cream on a baking sheet; freeze ice cream balls at least 1 hour or until firm. Must be very hard. Combine crushed corn flakes and cinnamon in a shallow dish. (Team Flakes may be substituted). Roll each ice cream ball in corn flake mixture, coating well. Place coated ice cream balls on baking sheet. Cover and freeze several hours or until firm. Must be very hard or it will start to melt before frying. Fry ice cream balls in deep hot oil for 10 to 20 seconds or until golden brown. Drain on paper towels, and serve immedi ately with honey, sweetened whipped cream, and cinnamon sugar tortillas. Yield: 8 servings. Cinnamon-Sugar Tortillas: '/* cup sugar I'A teaspoons ground cinnamon 4 8-mch flour tortillas Vegetable oil Combine sugar and cinnamon, stirring well; set aside. Cut each tortilla into 4 wedges. Heat V 4 -inch oil in large skillet to 350 degrees. Fry tortilla wedges, a few at a time, 1 minute or until golden brown. Drain well on paper towels and sprinkle with sugar mixture. Yield: 16 tortillas. ANSWER Trudy Brubacker, Mt. Pleasant Mills, wanted some good recipes and tips for using a cheese press. Thanks to Shirley Shaw for sending a recipe. 2'A gallons sour milk 2 heaping teaspoons baking soda 'A cup butter 2 cups sour cream 1 tablespoon salt Buttered mold Let sour milk set until it is thick like junket. Scald and pour into cheesecloth. Let hang until curds are dry (overnight or about 12 hours). Crumble curds and mix in 2 heaping tea spoons baking soda and 'A cup butter. Let set for 2 hours, then put in top of double boiler. Add half of the sour cream and melt. When melted, add the other cup of sour cream and the salt. Mix well. Pour into a buttered mold. Let set until com pletely solid. Slice.
