As more of the swine genetic map is unraveled and genetic con trol of physiological processes more clearly understood, selection of genetically defined animals may become more apparent. High Forage Diet Produces Low-fat, tender lamb can be produced by feeding ram lambs a high forage diet. A five-year United States Department of Agri culture, Agricultural Research Service study shows that market ing lamb meatjrom young rams, rather than from wethers, could benefit consumers and farmers. Most lamb meat comes from wethers, which are tender but high in total fat and saturated fat. How ever, young rams fed a test diet of mostly alfalfa forage were 54 per cent leaner than wethers. The rams produced rib-eye chops with 22 percent less total fat and nearly double the polyunsaturated-to saturated fat ratios than wethers on the same diet. The ram meat is not as tender as that from wethers, but current research may solve that problem soon. The farmer could benefit too, because forage-fed rams grow about 15 percent faster and use feed about 15 percent more effi ciently than wethers. Electronic transponders were placed under the skin in the flank, back, and behind the car to determine which site caused the fewest implant rejections and was easiest to relocate at slaughter. Each implant was preprog rammed with an identification number to be read by a device similar to the UPC symbol reader at your local supermarket. Of the 30 pigs implanted, 28 could be identified by their implant at slaughter, and no tissue abscesses or rejections were reported. The overall average dai ly gain of the implanted pigs was similar to unimplanted penmates. It appears that electronic implants can accurately identify pigs after slaughter. Warren Herklotz, lifelong dairy farmer from Franklin, NY, was recently appointed to the National Beef Promotion and Research Board. Chosen by USDA Secretary of Agriculture Edward Madigan, Herklotz will not only serve a one three-year term on the National Board, but he will be given a seat on the New York State Beef Industry Council. In a letter to Herklotz, Madigan wrote, “Your appointment repre sents the industry’s considerable respect for you as well as their confidence in your ability to pro vide the progressive leadership so essential to achieving the objec tives of this important nationwide program.” After attending his first board meeting in Tampa, Fla., Herklotz said, “I look forward to represent ing New York on this young aggressive board.
