Pumpkin Butter 3Vz cups cooked pumpkin 1 tablespoon pumpkin pie spice 4!4 cups sugar 1 box powdered fruit pectin Add spice and pectin to pumpkin in large pan. Mix. Stir until mixture comes to a boil. Add all sugar immedi ately and stir. Bring to a full rolling boil and and boil hard for 1 minute, stirring constantly, remove from heat. Ladle quickly into hot sterilized glasses. Cover immedi ately with Vi inch paraffin. Store in refrigerator. Makes seven, 6 ounce jars. For long storage, freeze. Pumpkin Preserves 4 pounds pumkin 1 pound dried apricots 2V4 pound sugar Peel and cut pumpkin in small pieces. Put sugar over pumpkin. Let stand overnight. Wash and cut apricots in small pieces. Add 2 cups warm water. Let stand 2 hours. Add apricots to pumpkin. Bring to a slow boil and cook until clear. Put in sterilized jars. Cover with paraffin.
