Each egg has been individually graded to ensure consumers get the quality eggs they demand, according to Vicky Wass, Egg Promotion Specialist with the Penn sylvania Department of Agriculture. Grades of eggs which are available to today’s con sumers include AA (fresh fancy), A and B. These are the superior quality eggs, as determined by interior and exterior specifications set by theUSDA. A grade AA egg, when broken out of its shell, will cover a small area. This is an indication of quality and not an indication of a small egg. The albumen or white of a Grade AA egg is thick and cloudy and stands high and firm around the yolk.
