Egg grades are explained
HARRISBURG - Most
consumers buy eggs at the
market without fully un
derstanding the grade
stamped on the carton. Each
egg has been individually
graded to ensure consumers
get the quality eggs they
demand, according to Vicky
Wass, Egg Promotion
Specialist with the Penn
sylvania Department of
Agriculture.
Grades of eggs which are
available to today’s con
sumers include AA (fresh
fancy), A and B. These are
the superior quality eggs, as
determined by interior and
exterior specifications set by
theUSDA.
A grade AA egg, when
broken out of its shell, will
cover a small area. This is
an indication of quality and
not an indication of a small
egg. The albumen or white of
a Grade AA egg is thick and
cloudy and stands high and
firm around the yolk. A

Your will find a top herd here with 70 mature Holstems (3 are Red & White Holstems).
42 cows are registered and the balance good grades. 13 Fresh; 20 Handling or
Bagging; 19 due Aug. thru November; some due in early winter; balance in all stages.
7 well started heifers - 6 are registered and 1 is Red & White. Registered daughters of
these famous sires sell - 5 own daughters of Whirliiill Kingpin, 2 daughters of Tidy
Gent, Capsule, Black Eagle, Spruce Gate Bold Majority, Danver Carol Senator, Fran
Lou Amencus, Fleetndge Monitor, Utag Ivanhoe and others. The cattle are presently
bred to good Tn-State & Carnation Sires. Cattle have been pregnancy examined,
blood tested for Brucellosis and TB tested and are eligible for immediate interstate

broken, unstained and
smooth, without rough spots.
Grade A eggs will cover a
moderate area when broken
out. The white is reasonably
thick, standing fairly high as
is the yolk. The shell should
also be clean, but may have
small rough spots. Both
Grade AA and A are ideal for
any use, but are especially
desirable for poaching,
frying and cooking in the
shell.
The breakout of a Grade B
egg covers a wide area. The
white has some thickness,
but the chalaza is small or
absent. The yolk is
somewhat flattened and
enlarged. The shell of a
Grade B egg may be slightly
stained and have moderate
sized rough spots. This grade

The color of the yolk also
vanes, depending on what
feed the hen eats. Generally
brown shelled eggs have a
darker yolk color than eggs
with white shells. However,
yolk color and shell color do
not affect taste or nutritive
value of the egg.
