1 tablespoon oil
2 tablespoons cornstarch
1% cups water
1 beef bouillon cube
V* cup soy sauce
Vz teaspoon salt
4 cups cooked rice
Cook celery, onion, and ground beef in hot fat in a large
frying pan about five minutes until meat begins to brown.
Blend in cornstarch with water and stir into beef nr: re.
Add bouillon cube, soy sauce, and salt. Cook, au.mg
constantly, until sauce is thickened and clear Serve over
cooked rice. Makes six servings.
BRUNCH BEEF SOUFFLE
1 pound ground beef or beef sausage
teaspoons salt
Vt teaspoon nutmeg
1/8 teaspoon pepper
6 eggs
Wz cups milk
5 slices bread, cubed
4 ounces Swiss cheese, shredded
1 tablespoon diced pimento
Brown ground beef in large frying pan; pour off drip
pings. Sprinkle salt, nutmeg, and pepper over ground
beef; let cool. Beat eggs well; beat in milk and fold in
bread r>bes, cheese and pimento. Stir in the cooled
ground beef. Place the mixture in a well-greased BxB inch
casserole or utility dish; cover and refrigerate overnight.
Bake in a slow oven at 325 Degrees F. for one hour and 10
minutes. Let stand for five minutes before cutting into
serving size pieces. Makes six to eight servings.

POCKETFUL O' BEEF AND EGGS
3 /4 pound ground beef
4 loaves pita bread
cup milk
1 tablespoon instant minced onion <if desired)
1 teaspoon salt
dash of pepper
6 eggs
1 cup shredded havarti or Monterey Jack cheeses
Cut loaves in half and enlarge pockets when necessary.
Add milk to onion. Lightly Thrown ground beef m large
frying pan. Sprinkle salt and pepper over meat. Add milk
to eggs and beat until light; add to browned meat and cook
slowly, stirring to scramble. When eggs begin to set, stir
in cheese and continue cooking until cheese melts and
eggs are set. Place *3 cup of scrambled beef and eggs in
each pocket. Makes four servings of two pockets each.
BEEF BREAKFAST BISCUITS
1 pound ground beef
Vz envelope onion soup mix
V 4 teaspoon thyme
2 tablespoons catsup
2 cans (10 ounces each) large refrigerator biscuits
2 tablespoons wheat germ
Sprinkle soup mix and thyme over ground beef and stir
in catsup. Separate refrigerator biscuits and flatten each
to 3'/z inches diameter. Sprinkle about Va teaspoon of
wheat germ on half of the biscuits (30), moisten edges
with water, and place about two tablespoons beef mixture
in center of each on top of wheat germ. Top with
remaining biscuits and press edges together to sea 1 .. Place
on baking sheets and bake in a hot oven, 400 Degrees F. for
20 minutes or until lightly browned. Serve immediately.
Yields 10 beef breakfast biscuits.
