Mix the dill with the butter and spread inside the trout. Lay the fish on the broiler pan or barbecue rack, brush with oil and broil or barbecue for about 5 minutes on each side. Meanwhile, peel the tomatoes, halve or slice, and sprinkle with the remaining lemon juice and pepper and chopped onion. Serve with the trout. Serves four. Cook’s Tip: If lake trout are available, they are particularly delicious cooked this way. Be careful not to overcook the fish or it will be dry. Bake at 370 degrees F. until lightly brown XXX LEMON COOKIES (With baking ammonia) 1 ounce baking ammonia 1 quart milk 2 cups shortening 4 eggs 4 cups sugar 1 or 2 drams oil of lemon Dissolve one ounce baking ammonia in milk. Cream together shortening, eggs, and sugar. Stir in the milk/am monia mixture and one or two drams of lemon to taste. Stir in enough flour to stiffen and to keep dough from sticking to board. Roll to about Va inch thickness. Cut into rectangles using corned beef can with ends removed.
