1 pound tomatoes
1 teaspoon salt
IVa teaspoons white pepper
cup chopped dill
6 tablespoons oil
1 onion, finely chopped
Rub the insides of the trout with salt and allspice, V*
teaspoon of the pepper and half the lemon juice. Mix the
dill with the butter and spread inside the trout. Lay the
fish on the broiler pan or barbecue rack, brush with oil
and broil or barbecue for about 5 minutes on each side.
Meanwhile, peel the tomatoes, halve or slice, and sprinkle
with the remaining lemon juice and pepper and chopped
onion. Serve with the trout. Serves four. Cook’s Tip: If
lake trout are available, they are particularly delicious
cooked this way. Be careful not to overcook the fish or it
will be dry.

HARTHSHORN COOKIES
15 eggs
3 pounds sugar
5 pounds flour
1 pound butter
1 pint buttermilk
1 tablespoon salt
1 tablespoon soda
3 ounces harthshom ammonia
Mix together first seven recipes. Then add a small
amount of water to the ammonia and dissolve in a dipper
on low heat. When all is dissolved and heated through, add
to the mixture and mix m. Dough must be chilled before
baking. It can be dropped by good full teaspoons or rolled
out to about V* inch thickness and cut with round cookie
cutters. (Better rolled.) Bake at 350 degrees F. on second
grate from bottom of oven until doughjasesajjttle/Then^

1 pint lard or other shortening
% teaspoon salt
3 eggs (well beaten)
2 Vz tablespoons baking ammonia or one ounce
1 pint milk
1 tablespoon baking powder
2 teaspoons oil of lemon
Flour to stiffen
Dissolve ammonia in small amount of milk. Cream
shortening and sugar until well blended. Add eggs. Blend
well. Add salt and lemon oil. Add flour alternately with
milk and ammonia. Spoon from mixing bowls to heavily
floured board. Press with hands about 1/8 inch thick. Can
be cut into squares with knife or circles with cookie cut
ters. Bake in a slightly greased cookie sheet. Bake at 370
degrees F. until lightly brown

LEMON COOKIES (With baking ammonia)
1 ounce baking ammonia
1 quart milk
2 cups shortening
4 eggs
4 cups sugar
1 or 2 drams oil of lemon
Dissolve one ounce baking ammonia in milk. Cream
together shortening, eggs, and sugar. Stir in the milk/am
monia mixture and one or two drams of lemon to taste.
Stir in enough flour to stiffen and to keep dough from
sticking to board. Roll to about Va inch thickness. Cut into
rectangles using corned beef can with ends removed.
Space evenly on baking sheet and bake 10 to 15 minutes at
350 degrees F

second official ADGA
sanctioned milking com
petition on May 26 and 27 at
the Warren County
Fairgrounds in Harmony,
N.J.
Competition is open to any
goat registered or recorded
by ADGA, AGS or CGS.
Goats must be on the
fairgrounds to be checked in
by 6 p.m. Friday. Proof of
registration, ownership, and
current health papers for
T.B. and Brucellosis must be
presented. Goats must also
have legible tatoos and be m
good health. All animals
must remain overnight and
be present for the Friday 7
p.m. and Saturday 7 a.m.
milkings under the super
vision of a qualified DHIA
tester.
Points will be given for
milk quantity, for length of
time fresh, and butterfat.
Any goat receiving 18 points
or better will be awarded a
