I have found that frits eaten with mayonaise is a real treat. Just as common are the sidewalk cafes, which you’ll find filled to the brim at the traditicnal four o’clock coffee break. There is a lot of atmosphere at these places as you hear everyone con versing and see them quenching their thirst with a tall glass of beef or a hot cup of coffee, often accompanied by a delicious pastry. In many homes the children come home from school to dinner and then return for the afternoon session. Homemade soup is always a first course, followed by fresh salad, the inevitable potatoes - served either boiled, pureed, or frits - fresh vegetables and the meat. A lot of pork, veal, beef and poultry is eaten here. From time to time I have also eaten rabbit and fish. I have experienced eating “moule,” mussels, and ray fins for the first time i Farming, Saturday, October 29,1977—11 S Nancy Henkel - both were delicious. Frequently, wine or beer is the beverage which com plements the meal. After the table is cleared and dishes washed, dessert is served. It consists of either fruit, pastry, or ice cream. There is always a cup of coffee to go with it. As I mentioned earlier in this article, there is a four o'clock break. At this time we eat buttered bread with jam, cheese, or meat. The evening meal at 7:30 or 8:00 p.m. is the same with an addition of either eggs or cottage cheese. At my third host family I was able to eat as much “fromage Wane” (cottage cheese) as I wanted since it was made at the farm for the market. The last meal time is at 10:30 p.m. or 11:00 p.m., if you are able to keep your eyes open that late. Once again coffee is made and served with a variety of little nastries. Now you can see why it isn’t hard to put on a few ‘ extra kilos, especially when you are a guest, and the cooks want vou to try their specialties. I have also learned to dnnk a lot of coffee - it costs about $5.00 a pound. I will be returning home to Lancaster County on Oc tober 28 with many won derful memories of the people and experiences here in Belgium. I can never thank all my sponsors enough for their con tributions to the IF YE fund. I only hone that I am able.to portray and share some of the feelings and experiences I’ve had through the many slides I’ve taken. Thank you. Although milk is processed it’s not an engineered or fabricated food. It naturally has two major components: fat, including fat soluble vitamins, and solids-not-fat, which includes proteins, carbohydrate, water-soluble -vitamins and minerals. These nutrients in milk make it a food not duplicated by modem science. XXX Dairying m the U.S. is older than the nation itself. First dairy cows came to Jamestown in 1611, helping to end the terrifying starvation. As pioneers moved westward, nearly every covered wagon had its cow following alongside, the family’s mobile “food factory.”
