Surprisingly enough, in this Pennsylvania Dutch area, only one reply came into the office. It appears that very few people are making this dish at the present time. Two more requests have made their ways to the Lancaster Farming office. Says the woman who made them both, “I recently ate out, and had com custard which was raised like an egg omelet on the top. This part tasted like egg custard, but the bottom looked like dried com. It is about two inches high and was cut into squares. Would anyone have this recipe?” She also asked for old fashioned crumb cake crumbs, which she says older people used to eat for breakfast. These sound like two tough requests to answer, but most likely there is a cook out there who can be of service. SchnitzPie (Dried Apples) 1 pound schnitz 1 orange rind and juice 2 cups sugar 2 tablespoons cinnamon Upholstering taught WEST CHESTER, Pa. - The Chester County Extension Service of Penn State University will offer a course in reupholstery. The orientation -meeting will be held on March 31 from 9:30 a.m. to 2:30 p.m. to acquaint those interested with the procedures to follow in preparing a chair for reupholstering. Included will be a discussion of the supplies and equipment needed. The orientation meeting will be held at the Chester County Extension office, 235 W. Market St. (3rd floor). West Chester. The work meetings will follow on April 14,15, 18,19, 20, 21, 22, 25, from 9:30 a.m. to 2:30 p.m. These meetings will be held at the Kennett Grange Hall, Greenwood and Hillendale Roads, Kennett Square. The procedure for the work meetings is to bring a chair and work on it at the Grange Hall each day. The chair may remain at the hall for the duration of the course. Two persons are permitted to work on one chair, with the cost for partners the same as for one registration. Chairs suitable to work on are boudoir and living room chairs that do not have diamond tufting or channel backs. The chair should be structurally sound. A fee for the course will be charged. Add orange rind and juice and more water if necessary. Boil until soft and then put through colander and add sugar, and cinnamon. Pour into pastry lined shell, dot with butter, cover with top crust or lattice strips. Bake in hot oven at 450 degrees F. for ten minutes then reduce to 350 degrees for 30 minutes. In an effort to finalize these recommendations, a conference is planned for April 2 at the Treadway Inn on Route 315 in Wilkes-Barre from 9:00a.m. to 4:00 p.m. The morning session will consist of a general outlook of the Northeast region, include a keynote speech by an important state official, followed by a panel discussion comprised of various high-ranking state departmental and legislative members. This panel will entertain from the floor following their discussions. DON’T FORGET - FREE FINANCE ON: The afternoon session will consist of eight discussion groups running simultaneously.
