And, what better way to share in the fun than to make holiday desserts? This week’s column is all about desserts, and nearly all would be terrific for the upcoming holiday season. Be sure to add, “Junior Cooking Edition, Christmas recipes.” PUMPKIN PIE Vz cup brown or white sugar M> teaspoon pumpkin pie spice Vz teaspoon salt 1 tablespoon all purpose flour 2 eggs 1-Vz cups strained pumpkin l-Vz cups sweet milk Makes one (9 inch) pie. Take one teaspoon lard (not melted) and grease pie pan and then sprinkle one tablespoon com meal evenly over lard for crust. Bake at 375 degrees F. for 50 minutes. Susan Z. Top: 2 eggs 1 cup lard 2 cups hot water 5 cups flour 3 tablespoons cocoa 2 cups brown sugar 2 cups molasses 2 teaspoons soda 1 teaspoon cinnamon 1 teaspoon salt Mix all of these ingredients together. Gradually beat in sugar. Add remaining ingredients, beating well. Pour into pie shell. Bake at 350 degrees F. for 40 minutes or until brown. Do not over bake. Doris Sauder East Earl, Pa. Age 9 LEMON PUDDING CAKE 4 eggs, separated One-third cup lemon juice 1 teaspoon grated lemon rind 1 tablespoon melted butter I-V2 cups sugar l-% cups sifted flour Vz teaspoon salt l-% cups milk Beat together egg yolks, lemon juice, lemon rind, and butter until thick and lemon colored. Combine sugar, flour, and salt. Add to egg mixture alternately with milk, beating after each addition. Beat egg white until stiff. Blend into batter. Pour into 8 inch square bakmg dish.
