The recipes were obtained at the Lancaster County Homemaker’s Christmas program, held earlier this month. Caroling is a very special tradition at a very special time of year. What better way is there to feel close to those around you and to share in group fun than to vocalize in the cold, nippy air and snow? To make caroling more fun, have something delicious planned ahead of time for when the group returns and is warming up by a cozy fire, or just slowly thawing in a nice warm living room in front of the T.V. If you are stumped as to what you can make that’s special and new, Susan Doyle, Lancaster County Extension assistant, has thought up some recipes that you might enjoy. Her first suggestion is a cheese ball. “This recipe gets lots of. mileage,” she says. And, what’s particularly nice about cheeses is that they can be frozen successfully ahead of time, so if you want to go out caroling with the rest of the group, you can. Then, when all the singing is done, you can come home to a delicious “munchy” food - - The Arctic tern flies about 11,000 miles migrating from the Arctic Circle to Antarctica twice a year, making it the bird with the longest migratory flight. CHEESEBALL V* cup milk 3 ounces blue cheese, cubed V* cup Cheddar cheese, cubed 6 ounces cream cheese, cubed 1 small onion wedge Vz teaspoon Worcestershire sauce Vz cup pecans, chopped 4 sprigs parsley, chopped Directions: Let cheeses come to room temperature. Put milk and blue cheese into blender container and blend. While processing, add Cheddar cheese, cream cheese, onion, and Worchestershire sauce. Blend until smooth. Chill. Shape into a ball. Chill again. About an hour before ser ving, roll cheese ball in chopped pecans and parsley. Makes a four-inch cheese ball. SWEDISH GINGERSNAPS In Sweden it is a custom to make gingersnaps for both eating and hanging on the tree. Susan suggests that you make the Swedish custom into a tradition in your home becuase it is both fun and entertaining. Another tradition with gingersnaps is that they are baked in graduated heart shaped cutters, so that those turning into tree ornaments can add interest through nonuniformity. These cookies are very spicy and have the second most costly spice in the for the "Do It Yourself" Man' Carton of 500 7.95 world as an ingredient - cardamom. Susan says that this ingredient can be omitted, since once it is opened to |he air, it quickly loses its potency and must be discarded. And, because only % tablespoon is used for the whole recipe, cardemom could turn out to be a very costly item on your grocery list. The recipe is: 2-Vz cups flour Vz cup butter, softened % cup sugar 1-Vz teaspoon each ground cloves, ginger, and cinnamon V 4 tablespoon cardamom V* tablespoon baking soda 1-Vz teaspoon dark corn syrup Measure flour. Combine butter and sugar in a large mixing bowl. In a small saucepan, mix 3 /« cup water and remaining ingredients. Bring to a boil. Pour over butter and sugar. Stir till sugar is dissolved and butter melted. Add flour one cup at a time, blending well after each addition. Store well covered overnight in refrigerator. Roll out small amount of dough at a time on lightly floured surface to V* inch. Bake cut-outs on ungreased 39.95 79.95 cookie sheet at 375 degrees F. for six minutes or until lightly browned. Let cool on sheets. Decorate with icing. Dough may be kept covered in refrigerator up' to two weeks. Make small hole in cookies before'- baking to insert string for decorating tree. Icing: • Blend two cups con fectioners sugar, one' egg white,' and one teaspoon lemon juice.
