FOR ALL YOUR FEED NEEDS. protein tension Service at Rutgers University, it is possible to compare the cost per pound of meat, poultry, fish, eggs and milk as purchased at the store, with the cost per pound of what finally reaches the table as edible food. The Rutgers data are confined to food sources of high-grade animal protein. Percentages of loss in preparation of the items listed range from dairy products, which are 100 percent edible, to lamb, of which only 47.5 percent may remain as consumable food after cooking and boning. Applying these percentages to Philadelphia Market in store prices as of mid- September, 1975, and listing the foods in order of the cost per edible pound, milk heads the economy list at 16 cents and lamb is at the high end at $3.89. Cottage cheese, milk, and eggs were lower in cost than February 1975 prices at the stores checked. Fish remained at the same price level with fowl, processed cheese, and meats somewhat higher. Pork advanced higher than all other foods studied with a 39 percent increase in cost per pound. Because adequate nutrition is a prime con sideration with the modem homemaker, the Rutgers figures have been sup plemented with the amount of protein per edible pound supplied by each kind of food, and more importantly, the amount of protein per dollar spent. Although meats rate highly in amount of protein per pound, they are also an expensive source of this nutrient. Turkey, milk, cottage cheese, chicken, and eggs supply the most protein for amount spent. Dairy Council suggests that homemakers can ease the food budget without lowering nutritional quality by planning meals around main dishes delivering high quality protein at the lowest possible cost.
