Maple syrup, a Pennsylvania product, can be used as is, heated with a little butter to use as sauce for sundaes, on waffles, french toast, pan cakes or even on cooked cereal. Maple syrup is also good as a sauce for brown betty, apple or peach dumplings and for cinnamon or pecan rolls. Use it to glaze baked ham and on baked sweet potatoes, baked apples or on broiled grapefruit. You can substitute maple syrup for sugar in many favorite recipes to give a distinct maple sugar flavor. For example, when making a cake, cookies or quick breads calling for one cup granulated sugar, use one half cup maple syrup. Reduce liquid in recipe by one-fourth cup. Reduce soda by one-fourth teaspoon and reduce baking powder by one-half teaspoon. Bake at a lower temperature - about 25 degrees less. If you are lucky to be able to buy maple sugar, less available than syrup, you can substitute it for white or brown sugar without making any alternations in the recipe. Following are some recipes using maple syrup: Maple Sauce (leup) Boil for 5 minutes; 1 cup maple syrup. Add: 2 to 3 tablespoons chopped nuts (walnuts, pecans, black walnuts or toasted almonds) Serve: Serve hot over ice cream, custard or pudding. Soften butter and mix thoroughly with cracker crumbs. Slice apples. Butter casserole and place sliced apples at the bottom of the dish. Pour maple syrup over apples, then add cracker and butter mixture. Bake in 325 degree oven for 25 minutes. Top with whipped topping or ice cream. Maple Syrup Cookies Vz cup shortening, soft % cup maple syrup 1 egg Vt teaspoon vanilla Vt teaspoon almond extract IVz cups sifted all purpose flour % teaspoon salt l*/2 teaspoons baking powder 1% cups quick or old fashioned oats, uncooked cup chopped nutmeats Heat oven to moderate 375 degrees. Beat shortening until fluffy; gradually add maple syrup, beating well. Blend in egg until light; add vanilla and almond extract. Sift together flour, salt and baking powder; add to creamed mixture. Stir in oats and nutmeats. Drop J>y teaspoonsful onto greased cookie sheets. Bake in preheated oven (375) 12 to 15 A Friendly Tip minutes. It may or may not be in a working condition, and most likely will not have a guarantee. An appliance marked freight damaged is new but was damaged in shipping. The damage may be a surface scratch or dent which won’t hurt its per formance. But if it is severely damaged it may not work correctly. Before buying a damaged ap pliance, you may want to check with a serviceman as to repair problems and cost. Appliances may also be labeled unclaimed freight. Dague Bldg., 235 W. Market St., West Chester. the chair caning course participants will learn how to cane your own chair. The seat of the chair must have holes into which cane was woven, because this workshop does not include replacing of pre-woven cane. It’s also recommended that the chair be finished or refinished prior to caning if a new finish is desired.
