Choose peaches that are fairly firm or that are becaming a trifle soft. Skin color between the red areas should be yellow or at least cream-colored. Avoid very firm or hard peaches with a distinct green color. They are probably immature and won’t ripen properly. Also avoid very soft fruits. These are probably overripe. Don’t buy peaches with very large flattened bruises (they’ll have areas of discolored flesh underneath) or peaches with any sign of decay. Refrigeration will slow the ripening process. Peaches that are not ripe will keep in the refrigerator for about a week. After a week they will begin to shrivel. Here is a recipe for a sumptuous dessert, Fresh Peach Cinnamon Sundaes 8 fresh peach halves, peeled and pitted 1 cup sugar 1 cup water 1 tablespoon lemon juice 2 tablespoons red cinnamon candies 45 c 35 c 150 FRUITVILLE PIKE MANHEIM, PA. t tablespoons cornstarch Heat sugar, water, and lemon Juice to boiling. Reduce heat to simmering, add peach halves, and cook 10 minutes. Remove peaches and place on Individual serving dishes, cut side up. Add cinnamon candies to syrup and simmer until candies dissolve. To serve: Place a scoop of vanilla ice cream in each peach half and top with warm syrup. For the first few years he picked the handful or two which they gave and we all enjoyed them. In fact, his parents tell the story of their very first big blueberry which was carefully carried into the kitchen, laid on a cutting board and sliced in half with a knife to be shared. But now that they are giving us gallons each picking, they are “Ours” and guess who has the honor of picking by the hour? All kidding aside I’m really glad we have enough to freeze, sell, make pies, sauce for ice cream and still have plenty to put on our morning cereal or eat with short cake. One beautiful afternoon the month our 4-H Com munity Club traveled to Longwood Gardens and were treated to many lovely sights which we had missed on previous visits. We saw the Italian Water Garden, took a woodland path along a lake, saw the waterfalls and heard the chimes in the Tower. Previously we visited the conservatories and saw orchids, ferns and tropical plants such as coffee, black pepper, vanilla and a banana tree. This time we noticed espoliered fruit or a peach tree growing on a trellis. This method allows more plants in a smaller space. This is a nearby and wor thwhile attraction for Lancaster countians. Philip and Cindy have spent a lot of time preparing demonstrations to be given on the County level.
