Precious young men are frequently seen draiaiug the glasses of wine which some waiter has left en the sideboard for half a dozeu guests. It is customary for the host te leave asupply of cigars in the gentlemen's room for the pleasure el such guefcts who may soeu find the hasty compliments of the parlor tedious. When the majority, with the hestess, retire, all gen tlemen iise and remain standing until the lady has disappeared. Ceremonials differ at different entertain ments, but there are some fermula: always te be observed. At large dinners soup and fish are never called for a second time. When asked for a choice of cuts the guests should always specify, and when inquiry is made as te whether light or dark meat of poultry is preferred, a call for both is net strictly elegant, as the great number of people may erhaust the fowl tee seen. If the delighted feaster will avoid the embarassment of having te leave seme course untouched, he will leave the cravings te be satisfied en the dessert. In serving the sauces, vegetables and appetizers are brought in en separate dishes, or at least kept distinct, and no cultured person will hurt the taste by mixing them. Ne plate should be leaded, nor should anybody be pressed te try a certain dish or have a row supply. If he is an intelligent individual, he best kuewB hew te show deference te his stomach, and if he docs net, it is well for him that some one else exercise that civility. "While it is often impossible te wait for the entire beard te finish a course, it iswell te delay until your immediate neighbors have finished befere sending away your plate. At a small company guests should wait until all are served befere beginning te eat, unless otherwise requested by the host. In that case the guest can display the nicety of culture by sipping water, arranging the small table furniture, as the two knives and forks, pepper and salt, cruets, wine glasses, water jug, napkin holder or prepare his feed. It is different at a larger affair, where couples begin the course as seen as served. Crackers, cubes of bread and celery are taken with the soup. Celery is a treacherous vegetable, and unless masticated noiselessly will brand the consumer. Seme very pelite people never serve it, excepting when chopped up and dressed ; then it comes with the entree. If the knives are steel, fish are always eaten with a small fork and a cube of bread, which may be five inches long and ene and a half thick. The steel will corredo en touching the fish. Sut even when plated cutlery is used the knife iu frequently dispensed with. Se much has been said about the vul garity of eating with the knife that little that is new can be offered here. The knife was certainly intended for cutting purposes, yet a millionaire, who may take precedence in financial circles, is denomi nated a beer in the societies that he thus offends, and inwardly detested by the urbane. But a gentleman is never se much a gentleman as when he has a knife and fork in his bauds and knows hew te U6e them. Filling the mouth tee full te permit conversation, drinking and eating noisily, staring around the table ever the edge of a eup or glass while drinking, blowing het dishes, pouring tea and ceffiee in a saucer, and getting the hicceughs are vulgarisms almost intolerable te the refined. It is often a delicate matter te knew just what dishes should be eaten with a fork and spoon. Usually all vegetables are taken te the mouth with a fork, and also as many side dishes as possible. Peas, beans, succotash, curry, creams, ices, puddings, custards and faney pastry are eaten with a spoon. And the judge decrees that the bowl shall be filled by moving the spoon away from the individual than toward him. In eatinsr, the lips should always be kept closed. It is perfectly proper te pick a bone and take corn in the fingers, but care should be used against soiling the mouth and hands. Any dis agreeable article that may be found en the plate should be quietly ignored, with out calling the attention of guests or host. When finished the knife and fork are laid en the plate parallel te one another, with the handles at the right, the spoeu placed in the cup and eggshells crushed en the plate. Everyone is under a social obligation te contribute te the conversa tion, mirth and congeniality of the table, while the lien should be amiable enough net te monopolize all the attention.
