Itemove the threads be fore sending rousts fowls to the table. In winter kill the poultry three days to a week before cooking. 'Poultry and game are less nutritious, but more diges tible than other meats. Hinge with al cohol Instead of paper a teaspoonful is Bultlclent for either turkey or chicken. Itemember, much of the skill of cook ing poultry In the beBt manner depends upon basting faithfully. To give roast birds a frothy appearance, dredge, Just before they are done, with flour and baste liberally with melted butter. "When onions are added to stuffing, chop them so fine that In eating the mixture one does not detect their presence by 'biting in apiece. Ladies doing their market ing will do well to remember that young poultry may be told by the tip of the breast bone being soft, and easily bent between the Angers, and when fresh by its bright full eye, pliant feet and soft moist skin. Orange Pudding. Teel and slice three or four oranges, and lay in a pudding dish with one third cup of sugar; make a custard of one pint of milk, the yolks of three eggs and one spoonful of corn starch, and one-third cup of sugar; when cold pour over the oranges ; beat the whites of three eggs and one-third cup of pulver ized sugar to a stiff froth and pour over; put In the oven a few minutes to brown. To be eaten cold. Another Style. Biew bIx large apples and pass through a selve: rub together a quarter of a pound of butter and a half a pound of sugar; stir in the ap ples while hot. After taking the skin and white pith from two large oranges, chop very fine and add to the other in gredients ; beat the yolks of six eggs very light and add ; reserve the whites for the meringue. Bake in rich paste. Flour the meringue frosting with orange juice and a little finely grated rind. Salt for the Throat. In these days when diseases of the throat prevail, and particularly a dry hacking cough, which is not only .dis tressing to ourselves but to those with whom we are brought Into business con tact, those thus afflicted may be benefit ed by trying the following remedy ; "Last Fall we were induced to try what virtue there was in common salt in about half a tumbler of cold water, and with this we gargled the throat most .effectually just before each meal time. The result has been that during the winter we were not only free from the usual coughs and colds, to which as far as our memory extends, we have always been subject, but the dry, hacking cough Las entirely disappeared. We attribute it entirely to the salt gargle, and do most heartily recommend it to those of our readers, who are subjects to diseases of the throat." Keeping Apples In Sand. A writer says that he finds fruit to keep best in perfectly dry sand. He keeps fruit in this way all the year round. He has had French crabs two years old. The Catlllac pear has re mained sound twelve monthB. The fruit must be sound when stored, and the sand must be quite dry. The chief advantages of packing in sand are, the exclusion of air curreuts, the preserva tion from changes of temperature, and the absorption of moisture, which favors decay. Much will depend on the apart ment in which the experiment is tried ; a dry or cool one being best. Graham Biscuits. . Two cups of graham flour, one cup of white flour, one cup of sweet milk, two tablespoonfuls of brown Bugar, four ta blespoonfuls yeast, one tablespoonful of melted butter, one-half teaspoonful salt, and the same of soda, dissolve in hot water. Mix well together, except the soda, to rise over night, and in the morn ing add the soda; knead quickly and roll about half an inch thick, cut out and let them rise about fifteen minutes before baktng. Baby Saved. We are so thankful to say that our baby was permanently cured of a dang erous and protracted irregularity of the bowels by the use of Hop Bitters by its mother, which at the same time restor , d her to perfect health and strength.
