A little ginger put Into sausage meat Improves the flavor. , When the rain-water In cistern be comes Impure and emits an offensive odor, put In a small lump of quick lime, which will exterminate such unpleas ant exhalations. In boiling meat for. soup, use cold water to extract the Juices. If the meat is wanted for Itself alone, plunge in boiling water at once. You can get a bottle or barrel of oil off any carpet or woolen stuff by applying dry buckwheat plentifully and faith fully. Never put water on such a grease Bpot, or liquid of any kind. Broil steak without salting. Bolt draws the juices In cooking: it is desira ble to keep these in if possible. Cook over a hot fire, turning frequently, searing on both sides. Flace on a plat ter; salt and pepper to taste. Beef having a tendency to be tough can be made very palatable by stewing gently for two hours, with pepper and salt, taking out about a pint of the liquor when half done, and letting the rest boil into the meat. Brown the meat In the pot. After taking up, make a gravy of the pint of liquor saved. A small piece of charcoal in the pot with boiling cabbage removes the smell. Clean oil-cloth with milk and water ; a brush and soap will ruin them. Tumblers that have had milk in them should never be put in hot water. A spoonful of stewed tomatoes in the gravy of either roasted or fried meats is an improvement. A Little Oil. Lubrication of the axles of vehicles, including even wheelbarrows, and of the journals of machines, is not only a sav ing oi power in their UBe, but it prevents waste and destruction of the material of the working parts. Nevertheless, if we should examine a hundred wagons, xeapers, or fodder cutters at any time, ninety or more of the hundred, would be found wanting oil or other lubricants. The choice of a lubricant is frequently ill made. Common kerosene oil is too often injudiciously uwd in place of a thicker or more bland oil, because the heat produced by the friction, rapidly vaporizes the oil, and leaves the journal dry. Crude petroleum for the same reason is fitted for very slow revolving journals, such as water wheels. For very heavy machinery or for gearing, tallow and black-lead rubbed up togeth er, is the best lubricant, and is also the best for wagon and carriage axles, during the hot weather. For light running machinery, sperm oil is the best ; good olive oil that has not beoome rancid, and acid, is perhaps the Becond best, and for winter use, lard oil 1b excellent, but is rather too drying to be a first class lubricant. Castor oil is better for axles in the winter time, and black-lead mixed with it is a help at any time. Cure for Burns. . Among the more common accidents which are liable to occur in the house hold, and which often prove serious, are burns aud scalds. Their severity and danger depend upon the extent of sur face and depth of tissues Involved. An unfailing remedy is, in most households, always on hand. Common baking soda or bi carbon of soda. Make a thick paste with soda and a little water and apply to the injured spot ; then dust the whole with the dry soda and cover with a light bandage. It will act like magic, relieving the pain at once. Allow it to remain until it is ready to drop off a few hours or days as the case may be. When it is removed, dress the wound with cosmollne. Never put on a burn or scald any molasses, starch, soap, flour charcoal or glue. They have the incon venience of being uncleanly, and some of them form crusts which It is difficult to remove. To, Keep Tomatoes. Take ripe tomatoes and wipe thein dry taking care not to break the skin. Put them into a jar with cold vinegar, add ing a thin muslin bag filled with cloves and whole peppers. Then cork the jar tightly with a oork that has been dipped slightly In melted, rosin, and put away in a dry place."Tomatoes pickled in this manner keep perfectly well and retain their color.- For this purpose use the small round plum tomatoes.
