EniTon Timkh: As tbe subject of wheat, flour and bread Is largely discuss ed in nearly all the Journals of the present day, devoted to that branch of industry, and as thnt branch of indus try is the closest allied to the comfort of every one, I would ask for a little space in your valuable paper, for the purpose of bringing to the notice of your readers what scientific men say on what I have been trying to impress upon the far mers, 1. e., the selection of the best wheat for general cultivation, and also curing of the same; because just as much, if not more, depends on the quality and condition of the wheat to make good flour, than on the milling thereof. I subjoin an extract of an article from a Journal devoted to the milling inter ests entirely. The author begins by making comparisons of different makes of flour as to the quantity of bread each kind made to the barrel, and gives it as the result of his experimenting that one kind made 280 ft is while the other made only 240 lbs to the barrel, and with surprise asks the reason why this is so. It is well known that wheatcomposed entirely, r almost so of starch, will not wake as much, or as good bread as that containing a large proportion of gluten. It is a well established fact that Fultz and Clawson wheat is almost composed of starch, and that accounts for so small a yield of good bread. Tbe Fultz wheat now being introduced into the state of Michigan has little or no gluten in it. It is largely grown in Pennsylvania, and has been ruinous to the flour trade of the millers, and the Clawson, which has considerable popu larity with the farmers is no better. Tbe flour made of either kind lacks strength, and will therefore make but a Bmall yield of bread, and is u nt versally condemned by good bakers. No miller making high grade of flour dares to buy it at any price. A choice grade of flour cannot be made of either Fultz or Clawson wheat. This 1b the universal testimony of all who have tested them. Farmers should avoid sowing them. A word la eeasou to the wise is sufficient. E. Young. Soot as a Garden Fertilizer. It is known, doubtless, to our lady readers that the refuse soot of our chim neys is one of the most valuable stimu lants and fertilizers they can have for their garden flowers. The following incldentof practical experience is from a lady cotributor to the Mural Caroli nian : During tbe season we nursed, fed and petted the Hartford prolific grape vine as much for its shade over the window as for its fruit; but it persisted in re maining a stunted cane, yellow and refusing to climb. Despairing of a shade, we finally bethought ourselves of soot as a manure, and forthwith made a soot tea by steeping a teacup of soot in a quart of water. This we administered. The vine grew six feet in height in the space of six weeks. ftaTln a recent discussion of the profits of wheat-growing la England, the curious fact was developed that the product of straw has become In that country more important than that of the wheat. This is not because the yield of wheat, in proportion to the straw, is less than formerly, but it is due to the fact that straw is now extensively used in chopped food for animals, and enters into so many manufactures, that there is a demand for all that is raised, and it brings a good price. Salt for the Throat. One who has tried it with benefit recommends salt as a gargle for the throat for those inclined .to a hacking cough, or soreness of the throat or mouth. A teaspoonful of salt is dis solved in half a tumblerful of cold water, and with this the throat is gargled just before each meal. Au unusual freedom from coughs or sore throat is claimed to be the result of this simple remedy. Mucilage. Every farmer's family should have on hand a good muc!lage,one that is always ready. Take the gum or wax that is found on cherry trees, put iu a large mouthed bottle and thin to the proper consistency with water, and you have an article which will not bpoil. If it becomes too thick, thin up again. VYalnuTsTiln. A good stain (walnut) for pine, poplar or maple wood : Water, 1 quart ; wash ing soda, 11 oz.; Vandyke brown, H oz.; bichromate of potash, oz.
