FLAKY MERINGUE COOKIES 12 cups sifted flour 14 teaspoon salt 15 cup (1 stick) butter 2 egg yolks, slightly beaten 5 teaspoons lemon juice 2 teaspoon grated lemon rind Nut Meringue Filling* Confectioners sugar Sift together flour and salt; cut in butter until it is the size of small peas. Add egg yolks, lemon juice and rind; stir with a fork until weil blended. Chill dough for ease in handling (about 2 hours). Shape into balls 1-inch in diameter. On lightly floured board flatten to form 214-in. circles using the bottom ofa glass or a rolling pin. Continue to beat while gradually adding sug- ar; beat until very stiff and glossy.
