Jedidia’s Restaurant is truly ‘an act of love’ By PAMELA AARON Staff Correspondent Jedidia (Sam. II 12:25) was the son of a king. The second son of none other than King David of Israel and Bathsheba, who later became known as ‘‘Solomon the Wise.” Note, foo, that Jedidia means “in love.” Jim Davis, owner and chef at Jedidia’s Restaurant on Route 415 in Dallas, had a dream years ago that he would one day have a son and would call him Jedidia. He and his wife, Carol laugh as they hug their 14-month-old daughter, Sarah Kate, ‘but we do have our son,” says Carol, “in this restaurant.” It (the restaurant) was a real “labor of love’ for Jim, he concedes. “A lot of love went into this restaurant...and a lot of thinking and a Jot of time,”’ he says seriously. ‘It was, in a matter of speaking, that ‘‘dream come true’’ - something I’ve wanted all my life.” The! incidentals of ‘the purchase of what was to become Jedidia’s Restaurant on the Tunkhannock Highway in Dallas two years ago are equally prophetic.. Carol Davis became pregnant at the same time they were negotiating for the place. Aptly, they named their first dinner buffet, held on Monday, Tuesday and Wednesday, in daughter, Sarah Kate’s, honor. The buffet includes many selections such as meatballs, chicken, salads, stuffed cabbage (etc.) as do the other buffet specials that were spawned later: Thursday, Friday, Saturday and Sunday dinner specials, for example list entrees at a savings. Luncheon buffet includes many of the items served for the dinner buffet and there is always a fish or macaroni selection on Fridays an hot items. Seconds on buffets are on the house at Jedidia’s. Eggs are served anytime here, though the breakfast menu and specials (and are they reasonable) are offered from 6 a.m. to 11 a.m. Steaks at Jedidia’s are suprisingly tender.
