Christmas is usually celebrated with much feasting in larger than usual groups of family and friends. Not only do the cooks who prepare these gastronomic events have to think of the safe preparation of large cuts of meat, stuffed poultry, ar§iliberhaps a variety of seafood - dents that can cuase distressing illness if improperly handled or cooked. But they must also adjust their everyday cooking habits to the safe handling and storage of larger than usual quantities of food. There are four principal types of foodborne illness, according to Thomas DeMelfi, of the state Health Department’s Division of Epide- miology. “They are staphloccocal food poi- soning, clostridium perfringens food poisoning, salmonellosis and shigel- losis. All are introduced into the food by undercooked or improperly reheated foods, unclean utensils or preparation surfaces, or by food handlers who have an infection and practice poor personal hygiene,” DeMelfi said. “Although these illnesses differ, all are gastrointestinal in nature, and may include one or more of the following: nausea, vomiting, diar- rhea, and abdominal cramps of varying degrees.” DeMelfi said that even though the sources and organisms causing foodborne illness may vary, the way re 3 cS EL % wr, .
