meringue. Men in the supermarket,
pinching the melons. Men in the
gourmet shops, debating the merits
of linguine or vermicelli.
Suddenly, the eighties’ man has
discovered the world of cookery,
finding that there is more to the art
than outdoor barbecue. He is trying
his hand at more complex cooking
methods and he has also discovered
that the preparation and serving of
food is entertainment in itself. The
male cook isn’t hiding in the kitchen
anymore but rather demonstrating
and sharing the process with guests.
Men in astounding numbers have
embraced this new lifestyle, which
will undoubtedly influence our
eating habits in the years ahead.
\ One of the benefits of cooking as
some wonderful classic recipes such
as boiled beef with horseradish
sauce, a robust, power-packed dish
that has appealed to the masculine
appetite since Great Grandma’s
day.
Despite its humble background
the boiled beef has a richness of
flavor that makes it particularly
satisfying. Brisket of beef or a
round roast is the cut of choice
because with such long simmering,
more tender cuts will fall apart.
Browned first, the beef simmes in
an orange-scented root vegbetable
broth spicy with cloves, allspice,
4 hours. Orange juice from Florida
contributes a piquant savoriness to
the beef while insuring its tender-
ness. The aromatic, delicious sauce
for the hearty beef is a blend of
heavy cream, yogurt and white
horseradish. -

Nutritional Month
During March the Dallas School Lunch Program celebrated
National Nutritional Month by featuring a counter-top display
contest for cafeteria workers in all elementary and interme-
diate schools. The theme of the contest was ‘‘Nutrition.’’
First place winner's were Township Elementary; Marlene
Reed, Anna Updyke, Betty Baker; second place Intermedi-
ate School: Martha Patts, Jane Ash and Alice Reese: third
place Westmoreland Elementary: June Anderson, Barbara
Rogers, Evelyn Sims. All contestants received trophies. First
place winners received tickets to their favorite cinema show.
