Since last June Heather, whose home is in Johannesburg, South Africa, has been traveling throughout Europe en- joying the sights, people and foods of each country. Beginning in Greece, a country Heather name beautiful islands, beaches, quaint harbor cafes and friendly people, of France, Switzerland, Italy, Northern France, warden, and their children, Michelle and Clive of Huntsville. Heather found Italy, with its art work, to be most interesting. Waking up in Venice where you must travel strictly by canal boat is quite an experience. Following a three week stay in New York City, Heather is now visiting her aunt and uncle Although Heather found Colleen and Hans Lank- beautiful ‘‘fairytale like with its gingerbread style houses, and loved Austria, where she spent a great deal of time on the ski slopes, she found French food most to her liking Frenchfood was always perfectly cooked in just the right portion size, seasoned with just the proper amount of herbs. Vegetables were very tasty, done to perfection. Heather found this cuisine very different from that in South Africa which is really a combination of Malaysian, Dutch, and English dishes. Heather, who holds a Bachelor of Arts degree in English, speech and drama; worked in public relations before embark- Since she speaks English, French and Afrikaans, language has not been too great a barrier. Heather loves traveling and meeting new people. Since one must travel such a distance from South Africa to visit Europe and the United Heather will travel through the United States visiting Washington; Disney World, New Orleans and touring throughout the western states. From the United States she will continue on to the Caribbean, to South America and back to Johannesburg. For our readers, Heather has graciously agreed to share some of her favorite international recipes: Gree Moussaka, 2-3 potatoes, boiled in French Shrimp their skins, peeled and Provencale, Italian dried $ Zabaglione and a Y% Ib. tomatoes, peeled delicious hot Austrian ' and diced wine called Gluwein. BECHAMEL SAUCE 34 oz. butter 1 T. flour 7% fluid oz. milk little mustard 1 egg, separated Y%2 oz. cheese, grated Soften the onion in the butter, add meat and moisten with tomato sauce. Season and add garlic, nutmeg or mace MOUSSAKA (GREECE) 1 1b. cooked ground beef 1 med. sized onion, finely chopped 34 oz. butter 3-4 T. fomato sauce, ready bottled Have ready the eggplant, salt previously sliced and pepper sprinkled with salt. Drain 1 clove garlic, crushed with 15 t. salt ; pinch of grated nutmeg or ground mace 1 eggplant eggplant, dry and fry in oil, then remove the slices. Arrange meat mix- ture, potatoes, tomatoes and eggplant in layers in a 34 T. oil . hot ovenproof dish. Stutts Performs Mark Twain, America’s favorite humorist, comes to the Penn State-Wilkes-Barre Campus in a performance by Will Stutts on Friday, April 22, at noon in the Bierly Auditorium onthe Lehman campus. The event is open to the public free of charge. Will Stutts has been performing his one-person plays for 17 years. Stutt’s Mark Twain production has been presented on college campuses and in major metropolitanareas in some 19 states and Canada. He has been featured in television productions and has ap- peared in both Broadway and off-Broadway productions. Rummage Sale Orange Little League will hold its annual rummage and bake sale April 22, 23 and 24. Prepare Bechamel Sauce, then add mustard. white to a firm snow and fold into mixture with the cheese. Spoon it over the Mossaka and brown in the oven at 400 degrees for 10- 15 minutes. SCAMPI PROVENCALE (FRANCE) 1 Ib. shrimp seasoned flour 1 oz. butter (to saute) 3 oz. button mushrooms, diced 3 tomatoes, skinned, hard stalk and seeds removed 5 oz. boiled rice (for serving) SAUCE 2 shallots finely chopped bouquet garni 1 wine glass white wine 1 oz. butter V5 oz. flour 1 clove garlic, crushed with 7% t. salt 1t. tomato puree 15 pt. good stock Prepare the sauce. Simmer the shallots with bouquet garni and wine until liquor is reduced by half, then remove bouquet garni and set sauce aside. Melt % oz. butter, add flour, brown lightly, then add garlic, tomato puree and stock. Simmer for 10- 15 minutes, then pour in reduced wine and cook a further 5 minutes. Draw aside and add small shavings of butter. Keep hot. Roll shrimp in seasoned flour and saute lightly in 1 oz. butter for 5-6 minutes. Lift into serving dish. Saute the mushrooms in the pan and add to the sauce with the tomatoes, roughly chopped. Boil again for 1 minute, then spoon over shrimp. Serve with rice. ZABAGLIONE (ITALY) 5 egg yolks 2 T. sugar 4 T. sweet sherry Combine the ingredients in the top of a double boiler. Stir well, then place one pot over hot, not boiling water and beat continuously with a rotary egg beater until the mixture is thick and fluffy. Remove from the heat, but continue beating for a few minutes to prevent the eggs from curdling. Serve hot in individual glass dishes, with a wafer biscuit. GLUWEIN (AUSTRIA) 2 bottles red wine, light bodied 1 lb. castor sugar orange and lemon rinds 6 cloves 1 nutmeg, crushed 2 sticks cinnamon Pour wine into a sauce pan, add the sugar and a muslin bag containing the cloves, nutmeg and toasted rinds of an orange and a lemon. Stir well anc heat until nearly boiling. Remove the bagand ladle into wine glasses with a small slice of lemon in each glass.
