* Post Post Cookbook ‘The rig ith-watering aroma of anise, ®innamon and apples wafted from the kitchen last week when we stopped to ask Melusine Dreher to share a few of her Christmas recipes. Mrs. Dreher, who lives with her. husband, Max, on Park Street, Dallas, had just finished baking some family favorites for Christmas. To a cheerful “come in and sample some of our favorites’, we did just that and found that each variety tasted just as good as it smelled. Mrs. Dreher chatted in- formally with us and her daughter-in-law, Jan Dreher, as she ~ casually translated = her favorite recipes from a German cookbook she brought from Austria, her native country. She arrived in Wilkes-Barre with her brother from Austria, Nov. 8, 1926, to join her fiance, Max Dreher, who had come to ~ America a year and a half ‘earlier. Ten days later the couple were united in marriage in St. Nicholas Church, Wilkes- Barre. After living in the city for four weeks, the couple moved to Kingston where both their sons, Max Jr., and Her- bert, were born. Six years later they moved to their home on ‘Park Street where they still reside. Both sons have since married. Max ghd his wife, the former Barb Ide of Dallas, with their children, Max III and Karen Lee, are living in Campbell, N.Y.; and Herbert and his wife, the former Jan Ferguson of Omaha, Neb., are living with their two children, Herb, Jr. and Susan, nearby on Elizabeth Street. Baking and cooking have Melusine Dreher’s, and most of “her recipes are those which . have been in the family for years and have proven to be ~favorités of her sons and grandchildren. She does admit, however, that it is not nearly as satisfactory to prepare foods for only two people, now that she and her husband are by themselves. She spends much of her and has completed 10 of them. One of her latest, crocheted from idl ed + yarn, reminds one of a beautiful rainbow of colors after a summer rain. Her daughters-in-law, Jan and Barbara, are the proud owners of three each, color-coordinated with the decor of their homes. Melusine and her husband have ‘‘green thumbs’’ and during the summer months, the large yard surrounding their home abounds with a beautiful variety of blossoms and plants. Since coming to America, Melusine Dreher has returned to Austria five times to visit her sisters and brothers still living there. Copkie recipes, apple cake, @ the Drehers’ favorite sauerbrauten are among those ~ the comely homemaker shares with Post readers in time for the Yuletide season. . Cinnamon Stars 11b. almonds (shell and grind 11% ¢. sugar 1 T. cinnamon 3 egg whites Mix ingredients until well blended. Divide dough into thirds. Place one-third of dough at a time on generously floured board. Sprinkle top with flour. Roll to approximately % inch in thickness. Cut with star cookie cutter. Place on floured surface and let stand for Several hours or overnight. Bake in moderate (350 degrees) oven for 10 to 12 minutes. Remove from oven, let cool and ice with confectioners’ sugar and water mixed. Yields 3 dozen cookies. : Anise Drops 5 1b. flour 15 lb. sugar 3 1g. eggs 1 T. anise seed. Mix sugar and eggs with electric mixer at medium speed for 10 minutes or until creamy. Add anise seed, gradually add flour until mixture is thick but drips slowly from spoon. Drop by teaspoon on greased cookie sheet. Let stand over- night. Bake in moderate oven (350. degrees) for 8 to 10 minutes. Springerle (Special Springerle roller must be used to make these cookies) 1 lb. sugar 6 eggs, 2 2 T. anise seed 1 1b. flour 1 t. baking powder Mix sugar and eggs with electric mixer at medium speed for 10 minutes. Add anise seed. Gradually add flour and baking powder. Mix in bowl until right consistency to roll. Dough should first be rolled with regular rolling pin until about %% to 3 inch in thickness; then press. springerle roller over dough to make patterns in cookies. Cut with dough cutter or knife. Place on greased cookie sheet or waxed paper sprinkled with flour, and let stand overnight. Bake in 350 degree oven for 8 to 10 minutes. Apple Cake 3 v4 1b. . butter: 0) margarine | 3, c.isugar <1 t. vanilla 4 t. lemon extract two-third c. flour 34 t. baking powder Cream butter and sugar, add eggs, lemon extract, and salt. Stir in flour with baking powder gradually until dough is right consistency to roll. Place in refrigerator and let stand at least one hour. Roll on floured board and place in 7x12 baking dishes. Makes two 7x12 cakes. Peel and core about five medium size apples and cut each one into eight pieces. and sprinkle with lemon juice. sugar and cinnamon mixture according to taste. minutes; reduce heat to 350, degrees ‘and bake 20 minutes.) (Dough may be kept in} refrigerator several days before using. Sauerbrauten Make a brine using: 2 lg. ice tea glasses water 1 lg. ice tea glass vinegar 1 onion, sliced in rings 1 carrot 1 celery stalk 1 bay leaf 8-10 whole peppers 1 slice lemon Mix together all ingredients, bring to boil and simmer for 10 minutes. Set aside and let cool. Brine may be used for deer meat, rabbit or beef. Prepare three to four pounds of meat and place in large bowl or crock. Salt and pepper meat to taste and pour brine over meat until it is covered. Let stand for one week. dutch oven and brown on both sides on top of stove. Then let simmer for about 2% hours, or if preferred, it may be put in oven and baked at about 350 degrees for about same length of time. Before serving, put three to four tablespoons sour cream into gravy for flavor. Auxiliary Hears Exchange Student Maria Reij, an exchange student from Brazil who attends the Dallas Senior High School, was guest speaker at the annual Jackson Township Volunteer Fire Company, Ladies Auxiliary Christmas party last week. She compared life, habits and customs in her mother country and the United States. Election of officers was held and the following members were chosen: president, Meryl Wagner; vice president, Caroline Esser; treasurer, Grace Fielding, and secretary, Mary Laskowski. It was announced that the auxiliary will make ‘“Monkies’’ at the next meeting which will be held on the second Wed- nesday of January at 8 p.m. in the Jackson Township Fire Hall. Those attending the affair Wright, Ruth Jeffery, Mary Hughes, Helen Zbick, Helen Laskowski, Hazel Fielding, Margie Zabick, Mary Emerick, Katie Gabel, Caroline Esser, Mary Laskowski and Maria Reij. A special Christmas show for children and adults will be pre- sented at the Little Theatre of Wilkes-Barre this Saturday at 7:30 p.m., and Sunday, with a matinee performance at 2 p.m. mas,, and Dicken’s “A Christ- mas Carol’’ will be performed each day. Santa Claus will be in the lobby for the children, following the performances. Scrooge will be played by Ed Goman, with Dominick P. Mis- Children’s Theatre production. Among those other persons performing will be Ralph Lewis of Dallas, Missy Araya, Sharon Polacheck, Sophia Rodzin, Andy and Mia Kurovski, Janine Alba, John Gillespie, Eugene Carpenter, Rich Moses, Mar- ianna Fischer, JoAnne Dra- piewski and Ellen Robinson.
