An “Eats” or “Restaur- ant” sign looms ahead, and the small- fry in the back seat begin a | shrill chorus of “We're Hungry.” | Dad slows down for a look. Mother makes a quick, on-the-fly judgment land reports, ‘Let's try the next place. This one dosen’t look clean.” Dad speeds up. And the car moves on down the highway trailing a mournful echo of “But we're hun- : gry.’ Sound familiar? The important part of the story is that Mother’s right. People shouldn’t have to eat in any restaurant that “doesn’t look clean.” This is one of the economic facts of life that’s recognized by all good restaurant people. As a result, they exert considerable effort and spend a great deal of money to make sure that their establishments greet pos- sible patrons with a neat, clean ap- pearance. They know that they can’t survive in business for long if they continually lose customers to “the next place.’ But restaurant cleanliness is in- volved with a lot more than just good business sense. It also has a close relationship to public health. A dirty restaurant, in addition to being unattractive, can be a source of disease. That's why the State Health De- partment and local health juris- dictions have established strict san- itation standards that should be met by every restaurant to protect the health of the people who eat there. These standards are concerned primarily with food storage and handling, enphasizing that all sup- plies of meat, eggs, milk products and other potential sources of food- related illnesses be kept at a tem- perature of 45 degrees Fahrenheit or less until used. But the standards also cover such things as refuse and garbage disposal and cleanliness of rest rooms, floors, equipment and utensils. All new eating places and all ren- ovations in existing ones must meet these exacting standards, which are enforced by a regular and continu- ing inspection program at both the State and local levels. Steps are taken immediately to correct any deficiencies observed during an in- spection visit. But despite official inspections and despite the efforts of business- conscious proprietors, there are go- ing to be times when restaurant patrons find cleanliness conditions somewhat less than ideal. ‘What should you do if you're faced with such a situation?....if you should enter a restaurant and find flies, littered floors, sticky counters, filthy table cloths or un- appetizing odors. ? The people at the Health Depart ment’s Division of Sanitation, the ‘State agency responsible for en- forcing regulations relating to res taurant cleanliness, recommend that in such a situation, you should leave immediately and eat elsewhere. By so doing, you'll be protecting your own health, and youll actually be doing the restaurant owner a favor by directing his attention to the situation.
