Preserving Strawberries This fruit needs an immensity of mois ture to swell it to the bigness we see in the market, and it has had its fill this j year. A medium sized berry, firm and acid, is better for preserving than the soft huge pink berries that break all to pieces in the preserving kettle. Strawberries are among the few fruits that are better preserved than canned. The c inned , strawberry—well, to vary the old Bishop's remark —the houskceper can do better with it. Do not handle the fruit much, and especially do not wash nor weigh it, you don't want to make a jam of it in the scales. Stem the berries lightly into a half pint tumbler, the ordinary green glass tumbler is best, as you need a large half pint. Keep a bit of paper on the table besid you, and with your blushing fingers tear a notch for every tumbler of, stemmed strawberries you empty into j your large meat dish. Of course you can ; use a pencil and make lead marks, but | the paper tearing is a part of the original receipt. When your fruit is all stemmed i and laid out on one or more broad dishes j count up your paper marks, weigh out in , your scales as mahy broken loaf sugar, j pounds as you have pints of fruit, in oth- j er words, for half your number of turn-1 biers. Spread the sugar lightly over the j fruit and let it stand for two or three j hours, until thc%*Tup has begun to draw j out of the berries. This is one secret of j fine preserving, not to have to cook the j fruit into a marmalade, as some straw- [ berry preservers do, or into a stiingy and acid syrup. When the syrup has come, slide the fruit off carefully into your pre serving kettle. II this is bell-metal or , brass it must be well scoured out imnic- j diately before using with line coal ashes j and a little vinegar, then scald with boll- ' ing water. Set it on the fire with fruit, sugar and all. As soon as this last melts begin to skim oft' the piukcy white scum that rises. This brings away the sand and grit, so that there were no need to wash the fruit. Take the scum oil rapid ly, because you must look at the clock . wheu it begins to boil. Allow half an hour, no more, and be careful, in filling | your preserve tumblers, to put a few ; fruit in each first, so as not to have them j crack. Fill the tumblers up about half and half with the syrup and fruit, and | when it is cold you will have full, finely shaped berries set in a beautiful clear jel ly of their own. Cover with white paper paste down with the white of an egg or flour paste. It is not necessary to put brandied paper** over the tops. If these directions are followed the preserves will keep till they are eaten up. Serve with cream or milk and you will have a lus cious and dainty dish with the real slraw berry taste.
