The milk house, priog house, vault whatever the place in hich milk is kept, should be clean and -wect in every particular. The walls should be whitewashed at least every three or four weeks, and the arrangements tor ventilation should be such as will give, whenever desired, full ingress to Iresh air. Pure, sweet air is absolutely necessary to the making of pure, sweet butter. The milk vessels must also be kept perfectly clean. This can be djne only by regular and frequent washing, linsintr, scaldiDg and scouring. Skimming of the cream is the nest point of importance. It should be done with great care, taking as little of the milk with it as possible. The purer the cream, the better the butter will be, and the easier the churning. The cream should be churned, at the farthest, at thitty six hours from the time it is drawn iiom the cow. If left a longer time, the cream assumes a strong taste, which -poils the flavor of the butter. Besides that it is more difficult to churn. The temperature of the cream is also very important, and should receive the dairy woman's closest attention, if she wishes to save herself a large quantity of time and labor. From 55 to 60 is about the proper temperature. If below this, the buttery particles do uot seperate readily, and if above it, the color, flavor and consistency of the butter are all in j tired. When the butter begins to form, a "lit tle cold water should be poured into the churu, and the dashers moved slowly back and forth, in order to prevent the butter from closing too rapidly, while a! the same time it. gives every particle of cream a chance to furnish its quota of butter. Where, in the winter season, but few cows are kept, and it is not convenient to liaxe the inilkiooui slightly warmed, as is usually done in iarge dairies, it is advisa-t lie to place the creaiu by the stove, keep ing it well stirred, so that the tempera-; ture uiav be about the same throughout 1 the entire quantity. A thermometer should be regarded as an indispensable appendage to every dairy. Where a therm nneter is not convenient, the proper temperature of the cream may be pretty closely determined by testing it. with the tipger. It should feel uot quite so warm as new milk. No animal, paiticu larly a young one, likes frosted grass, while frozen : therefore they d> not eat it until the frost melts away, and they are quite as well in the stable, with a iit tle sweet bay beloro them, which they will readily eat at this tiu.e of year—aad all the better as a change of diet We have seen a fine lot of calves, lambs and colts, in nice condition, from being left out through a series of frosty nights, and October and November storms, with plenty of grass about them, run down their flesh wretchedly, from exposure alone ; and when it is so easy to prevent it care should be taken to do so. A warm well summered animal young or old should go into Winter quarters thriving • then if led well 011 Winter fodder, it wii! keep thriving. Otherwise it stunts, and it takes extra food to start it again ; and perhaps loses half a season's growth, just ■ for the want of a little pains taking at the proper time. Now is'a capital time fo domesticate tie young things, if they have boen anv way shy before. Carry them good little odds and ends of your garden stuff, veg etable tops —such as beets, carrots, tur nips, parsoips, cabbage leaves and pum kins. Feed them a trifle of salt: let them become familiar with, and love you.
