Mr. Deanistou, a practical butter maker, tell", in the following brief description, how the celebrated Gosheu butter is made: The cellar where the milk is kept should be cool, well ventilated and cieau. The milk outfit to be strained luto pans containing ten er twelve quarts each. If the weather is very warm, the pans ought to be set on the cellar bottom otherwise on shelves The milk ought not to be churned till it becomes thick or loppered the milk and cream are then churned together Some dairymen .kim off the cream and part of the milk, and churn that, but the Goshen butter is churned from the milk and cream The churn used is the common "dasher churn." driven by dog, horse or hand power, accordiug to the size of the dairy. The churn may be half or two thirds full with unit; and a pailful of cold wa ter added before starting the churn. In cold weather, warm water is put in Tho chur ning should be with a slow, regular usolion and to make good solid butter, will take from one hour to one hour and a half: before the churning is done, another pjilful of water is put in. When the butter is done, take it out wash it through one water in a tray, throw the water out, then fcalt the butter, using about one ounce of pure Liverpool (Ashton) alt to each pound of butter, put it in a cool plaee, and let it stand an hour; then work it cre-fully over, and set it aside for five or six hours work it over again, an I set it aaida in tho Fame coo! place till the next, morning when it is packed. In working butter great care ought to be taken to work out all of the milk, but not to work it too much, so as to break the grain, and make itsalvey. If any milk is left in, the butter will soon become rancid; and if worked too much, it will be greasy or salvy, and not solid Butter work ed just enough will be solid, sweet, and yel low, and the drops of brine on it will be clear as crytal. Orange county butter is packed in white ' oak firkins, the staves selected so as not to leak the brine; the firkins will weigh about eighteen or twentv pounds emptv. The fir- O - - - L - kins pre soaked in pure cold water for some days before using, by being filled with water thev hold from eighty to one hundred pounds of butter. When the firkin is full, a linen cloth is placed over the top of the butter, and on this cloth a layer of salt an inch in depth is laid, made a little damp with cold water. The butter stands till marketed; then the salt and cloth arc taken off, a fresh cloth wet with brine put on, and the firkin headed up. Great care should be taken to have the firkins kept perfectly clean. The outside ought to be as bright as when turned ouc by the cooper. No leaky firkin, or any thing that will filter the least particle of brine ought to be used. This is the way Goshen butter is made. Prince Albert 1'otatoes This potatoc. which some think equal to the Mercer, is clearly becoming a favorite both from its quality and productiveness. The Country Gentlemen says poor pcoplo have been experi menting with it for themselves, and say that on the 'sixteenth of sin acre about four hun dred bushels per acre were obtained, only about two dozen of which rotten. Another plot of the same extent, yielding a little less there were only two rotten tubers found. This variety is begintng to bo cultivated here. Cooked Corn. Mr. FJlsworth has proved that one pound of cooked corn will make more pork than two pounds fed iu the raw state. The Working Farmer concludes that since a considerable portion ef uncooked corn will pass in an undigested condition, tho farmer wkj thus feeds, will get a very rich manure "j bat at too high a cost. Tho same conclusion applies to the feeling or all grains and itar chy vegetables. The hind of Seed Com to vse. William L. Morgan, of Potts, Warren county, ludiana. says that seed from the butt end of an ear of corn will ripen' its product all at tho same time, and some three weeks earlier than seed from the little end of the same ear. He rec ommends farmers always to break "their bsed corn ears iu two in the middle, and U5etli2 butt ends only for seed Cattle Yards. Cattle yards should be well littered with refuse straw. It absorbs the li ui 1. and prevents much of this valuable part of the manure from running to waste. It j augments the quantity of the mauure, and adds largely to the comfort of the stock. A dry sheltered, well-littereJ barn-yard, is a pleasant plaee -in winter you will be inclin ed to ppend considerable time there and we know cattle and sheep thrive mush better for being "looked" et. Save your llay Seed. Many farmers nev er think of saving the offal frotn the cattle or horse maDgcr, but throw it away, or into the manure heap. In either case the seed is lost and in the last it becomes a great nuisance, if the manure be applied to Loed crops. An old writer says he "saved sufficient hay chaff one winter from feeding twenty-three head of animals, to stock down ten acres of meadow."
