    Tlie Oalry.
As an article of profit for ihe farmer, the
diry u equalled by few, excelled by none.
It is far ia aJvinco of grain-raising; as it is
much more cor lain and not exhaustive of the
oil. Still it requires strict attention and close
management. The surest way for a new be
ginner to obtain a good&tockof cows, is to go
to a large dairyman, and by prying a good
rouud price. Lave the privilege of selection
the repaired number. Ia this way he will
obtain the best stock, whereas if he buys them
one at a place he will be very apt to get a poor
animal, as it is human nature to sell the poor
est. If he has not rueaas to adopt this me
thod, the next best way is to engage of an
honorable man the required number of heiffer
calves. To have a good pasture is essential.
A mixture of timothy and clover is the best
grass. The stock should have plenty of clear,
running water, not swamp settlings. A few
6 hade trees in the lot will conduce very much
to coiii fort in hot days. Have a trough under
cover filled with salt, an ! give your cows free
access to it; it improves the butter aud cheese
much more than a casual observer would im
agine. Many farmers are in the habit of
scattering salt on the ground about once a
week, half of which is wasted, and the rest
eaten with dirt and roots. As to the details
of cheese-making, it would be useless to givo
them. It requires practical illustrations and
practice. It is considered more profitable
than butter-ruakiog, especially in warm weath
er. When butter is made, an ice house well
filled is almost indispensable. A small piece
should be placed in each vessel of milk, and a
larger quantity in the cream when churning.
The best churn that I have used is the com
mon barrel churn; it is simply a barrel of oak
with three of the staves projecting in the in
side about four inches. It is placed on fric
tion rollers requiring very little labor to turn
it. There is no waste of creau, and the but
ter can be washed without removing it. I
generally wash the butter iu three waters, Fait,
and set it away until the next day, thee woik
it again and pack in tubs. Cream rises the
best when the milk is set above ground. A
cool, dry room, on the north i-ids of a build
ing, with shade trees, if possible, is much su
perior to a damp cellar. There tbould be
plenty of air, and the utensils should be kept

Solon Robinson told the farmers iu his ad
dress at Hartford" writes of his success with

was too wet to plow in the spring, in seeding

to sow grass seed among the corn, an article
appeared in the Daily Tribune recommend
ing it. This decided the matter, and the
