Making the gravy While your bird is cooking make a broth for the gravy by simmering the necks, giblets and any trimmings. After the bird is cooked, pour off the excess fat from the pan drippings save only the fat streaked with brown, not the clear liquid. Measure your drippings and add the same amount of flour and one cup of your strained giblet-neck liquid . for each two tablespoons of fat. Simmer until well blended. The above should deliver to your guests a fantastic pre- Thanksgiving feast. Eat well while you're home.
