Tle Farmer Dpnrtniiiti A Vineyard on Evkry Farm. Rome day in the future, tays tho Rural New Yorker, the art aod practice of wiue zsakiag will be as familiar and universal among us as the manufacture of cider is now. And the juice, of the grape, proper ty prepared, is greatly superior to that of the apple in strength and health giving elements. It is easy for farmers to pro Tide ample supplies of wine for their house hold use at a comparatively trifling cost. A half acre in each hundred of cultivated land, set with vines of hardy varieties, would bo sufficient, if well cared for, to furnish both fruit and wine for the num ber of people occupying, on the average, that area. Doubtless there are limited re eionR tc our country where crapes would not succeed: but the area is vast where they would thrivo to a sufficient degree to make the crowing of them for family use satisfactory, although it might te far from profitable to raise them for market. In any neighborhood or locality where a solitary vine doe3 well, it is certain that enough others will thrive to supply the wants of the population. By such univer sal planting only can wo hope to 6ee the rural population of our land supplied with fruit and wine, for the products of the fa vored grape regions, where the culture is carried on extensively, will be mostly ab sorbed by citiei. Let every farmer have his vineyard, as well as his orchard, not planted with a view to selling its products, but to consuming them in his own family. It is pretty safe to assert that where apple trees will flourish, some varieties of grapes will do tolerably well alongside of them. The manufacture of wine for home use ehouM be conducted almost precisely like that of cider. Have the fruit ripe and clean j mash it and pres3 out the juice with care; let it ferment a few days, like good cider, then rack it, cleanse the casks and refill them; bung tight and rack again early in the spnng, and the third time on the approach of hot weatherj have sound, swoei casks, keep them full, and store in a clean, cool celUr, and your beverage will excel in grateful flavor and healthful, exhilarating effects, when the hard labor and hot suns of summer tempt its trial. It is as easy and simple to make good wiue as good cider. The yield of wine would probably average four hundred gallons per acre from well cultivated vineyards ol strong, hardy varieties, like the Concord, Ives, and Clinton. Salt for Teach Trees. Downing, in his valuable work on Fruits and Fruit Trees, speaks of the application of salt to peach trees as a very effectual agent for the destruction of the peach worm. He says : "In the neighborhood where the peach-worm usually destroys one half the peach trees, we have seen them preserved in the healthiest condition by the annual application of a handful of coarse salt, about the collar of the tree at the surface of the ground." This tallies with my experience exact ly.' A few yearssince, havingsome young - . . . i . . peach trees wnicn aia not present as healthful an appearance as desirable, and having a small quantity of refuse salt on hand, I resolved to apply it to some of the unthrifty trees. The change wrought in the appearance and condition of the trees to which salt was applied was very remark able. The foliage assumed a dark green color, and the growth that followed was very gratifying. Without being aware until recently of the suggestion of Mr. Downing, I continued the use of the salt, and with the same happy result, and am confident in the belief that growers will find it to their advantage to adopt the method which I have found to operate fo well. Whether the vigor of tho trees is due to the destruction of the worms, or whether to the action of the salt, which experienced horticulturists tell us pro motes the verdure and luxuriance of trees, I am not prepared to say. To make this wine the berries should be gathered when perfectly dry, and separated from the btems j mash fine, add two gallons boiling water tj oue of pumace, and let it stand until it begins to ferment. After pressiag out the juice, add three pounds ol sugar to each gallon; put into clean casks, jugs, or demijohns, fill them full, and keep them lull, as it tends to fermentation ; then cork up air-tight, or bottle off. It will be fit tor use io four or six months, but will improve with age. If the quan tity to be made is small, it may be pressed in a coarse strainer, or a pieco of coarse, cotton or flannel, or, what is better, a strong cask with holes thickly bored through it, nod put uudcr a hand cider mill or cheeso press. - ' ' ' Grafting. Many persons who have .trees -of poor varieties in their gardens neglect to graft them year after year, and lose much valuable time. They raise poor Jruit, or none at all, wben. they uiigh; raise l'ood. and Dlentv of'it.; Some wait because the tree is not largo enough to graft, as they think ; and it may not be for cleft grafting ; though, if , tte, scions selected are small, a small stock niuy be success fully grafted. If the etock is quite small .ppliced or whip-graiting is better; and it can be done feo as to preserve the symmetry of the tree. GROCERIES!
